AAAAANNNNDDDD shortages in the news again. Costco is limiting toilet paper, there are rumors of toy shortages for Christmas and there are hundreds of ships sitting in ports with full containers just waiting to be unloaded. More and more we are going to be cooking and feeding our families with whatever we can find. I am trying to build up our list of shelf stable recipes and begin rebuilding our emergency food stash. The last couple of weeks I have been featuring recipes from Food Storage Made Easy. This week we are talking about shelf stable sandwich fillings.
In addition to peanut butter and honey, you can buy canned chicken, canned tuna and Spam at most stores, which helps if you are experiencing shortages in your local stores. It gives more options, I have even seen these canned meats in places like Tractor Supply and Rural King! Here are some options using shelf stable ingredients to jump start your creativity.
- BBQ Chicken- canned chicken and bottled BBQ sauce
- Buffalo- canned chicken, melted butter or margarine, hot sauce (like Franks or Tobasco)
- Chicken salad- canned chicken, mayo, relish, onion powder
- Buffalo Ranch- canned chicken, ranch dressing, hot sauce
