Microwave Baked Potato
Ingredients
- 1 potato
Directions
1. Scrub potato. Prick several times with a fork or knife.
2. Place on microwave safe plate.
3. Cook according to table below. Turn over halfway through cooking

1 | 7-8 minutes or until soft |
2 | 10-12 minutes or until soft |
4 | 14-18 minutes or until soft |
3. Turn over halfway through cooking.
4. Let potato rest for 1-3 minutes
When I discovered you could bake potatoes in the microwave, I wanted to throw a party! You can top them with anything and you don't even have to top all of them the same way. You can use leftover chili, cheese and sour cream, bacon bits, taco meat, even spaghetti sauce.
This is one of those tips that is great when you are short on time. While the potatoes are cooking in the microwave, if I am not topping them with leftovers, I have time to fry a couple of burgers or sausages to go with and everything is ready in 20 minutes or less. All that is needed is a vegetable on the side and you have got a great, healthy, quick meal.
I like to have baked potato bar for dinner the night after we have tacos using America's Test Kitchen beef taco recipe. Topping the potato with some of the leftover meat and whatever other toppings people like is so filling and an easy way to use up leftovers. I usually serve it with a salad.
