Sweet Potatoes- so easy and so nutritious

 Sweet potatoes are the “in” thing right now. They are in season and on sale, in my area they are only 29 cents a pound! They are jut as filling as white potatoes, but have a lot more nutrients, making them a really healthy, inexpensive choice this time of year.

  There are a lot of  ways to cook sweet potatoes, you can boil them, bake them, grill them, fry them, microwave them, cook in a crockpot or instapot, even slice and grill them.

My favorite way to eat them is to wash, peel and cut into chunks and toss with oil, then bake in a 400* oven for 30 minutes or so 

But even easier is to microwave them!

  • Scrub sweet potato until clean 
  • Prick several times with a fork or knife 
  • Microwave on high for 5 minutes
  • Check for doneness, if knife slides in smoothly, they are done, if it doesn't slide in smoothly microwave for 30 more seconds and check again. Keep checking at 30 second intervals until soft inside 
  • Top cooked sweet potatoes with butter, some people like to sprinkle a little sugar and cinnamon for a sweet version.

  1. Sweet potatoes are a staple in our household. We have them at least 3 days a week in some form or other.

  2. That is great! I didn’t grow up eating sweet potatoes, so my kids didn’t either. I discovered them a few years ago and am trying to fit them more into our diet.
