We all know that, in season, fresh fruits and vegetables are best, but research has shown that canned and frozen fruits and vegetables having been given a bum rap. Frozen produce is picked and frozen at its peak and canned vegetables are processed within hours of being picked, making them perfectly suitable choices for a healthy diet. I know all those cooking blogs out there stress that the only good choice is fresh produce, but don't let that make you feel like what you are providing is second best. Canned and frozen produce are great options for serving meals full of vitamins and fiber, and even the best choice if the produce you are serving is not in season! Besides, any veggies are better than no veggies and canned and frozen fruits and vegetables can really stretch your dollars or food stamps.
Here is a yummy way to serve canned green beans:
- 1 can green beans (can sub fresh or frozen, just need to increase cook time)
- 1 tablespoon of butter or bacon grease
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- salt and pepper to taste
Drain half of the liquid from the can, put the beans and remaining liquid in sauce pot. Add the rest of the ingredients and bring to a gentle boil, stirring occasionally, until most of the liquid has been cooked out.
You can also make this in the microwave, drain all the liquid from the can, add rest of ingredients. Cook for 1 minute, then stir and cook for 2 more minutes. Stir well to make sure the beans are coated with seasonings.

If you're using canned fruit, be sure to choose the lower sugar option if it's available. Light syrup or canned in juice is better than heavy syrup. Though, if heavy syrup is the only option, that's better than no fruit at all. Don't let the perfect become the enemy of the good!
