Shelf Stable Saturday and Beyond Peanut Butter Sandwiches

 Peanut butter is one of the most common proteins found in cupboards and food boxes. I am totally guilty of sneaking a big spoonful from the jar when hungry in a hurry. We always have peanut butter around, because if nothing else, you can spread it on bread or crackers for a filling snack. Lately I have been trying to find other ways to use peanut butter. One thing my kids discovered was stirring peanut butter, cocoa powder and powdered sugar into oatmeal. It is a popular snack here right now. Sometimes they slice bananas into it too. Making this post has reminded me of a few yummy things we haven't eaten in a while, looking forward to making our next meal plan!

Thai chicken pasta

Chicken Satay noodles  -both of these recipes call for whole wheat pasta, but regular can be used

Peanut Chicken Stir fry  -calls for rice noodles, but regular pasta or rice can be used     

Peanut Chicken Chili   

Sweet and Spicy Peanut Chicken- I am going to try this one next week since we have an open jar of pepper jelly we got for Christmas

Peanut Butter Pork Curry     

Thai Chicken Wraps  - I want to try this one too!

Here are some other ways to use peanut butter- 

Peanut butter and jelly french toast- make a pb&j sandwich, coat in beaten egg and cook like french toast

Peanut butter syrup- warm peanut butter up in a small pot and thin with a little water, add a little sugar to make it sweeter

Stir into chili to add protein- 1/4 to 1/2 a cup works great in a pot of chili

Stir into oatmeal- my kids also add cocoa powder and some sugar

Top saltines with peanut butter and 3 or 4 chocolate chips- watch out, addictive!!!

Use as a dip for apples or pears
