I really like soup. It can be budget friendly, it is warming and it is very forgiving, meaning you can make it ahead and reheat, you can make it in a crockpot, and you can fudge the amounts of ingredients here and there. I don't really make soup from a recipe, I learned how to make soup bases. Working from a base gives me the freedom to use whatever is on hand, inexpensive, or about to go bad. This tutorial from Simple Bites explains the "how to" much better than I ever could. Once you learn to make a basic soup, the combinations are endless, and so are the substitutions that can be made. No onion? Onion powder can be added. Not enough chicken for your taste? Add sausage! The combinations are only limited by your taste buds. Here is our menu plan for this week, we still have some ingredients left from our Farmers to Families box, so am looking forward to using those and saving some money.
Monday-
- Breakfast- Scrambled egg, frozen waffle, 1/2 banana
- Lunch- Kids eat at school, Us-Leftover soup, corn bread
- Dinner- Spaghetti with Chicken meatballs from food box, green beans, bread and butter
Tuesday-
- Breakfast- Yogurt with canned peaches stirred in, toast
- Lunch- Kids eat at school, Us- leftovers
- Dinner- Potato soup, (adding onion and carrots), crackers
Wednesday-
- Breakfast- Peanut butter oatmeal, 1/2 banana
- Lunch- Kids eat at school, Us- leftover soup, boiled egg, celery sticks
- Dinner- hot dogs, pretzels, cut up fruit
Thursday-
- Breakfast- PB & J toast, orange slices
- Lunch- Kids eat at school, Us- sandwiches, crackers, carrot and celery sticks
- Dinner- Cheesy White Bean and Tomato Bake, garlic toast, corn
Friday-
- Breakfast- Scrambled egg, frozen waffle, 1/2 banana
- Lunch- Kids at school, Us- Leftovers
- Dinner- Chicken meatball subs using hot dog buns (the meatballs are tiny), pretzels, carrots and celery sticks
Saturday-
- Breakfast- Biscuits and gravy, applesauce
- Lunch- Easy Pan Pizza, salad
- Dinner- Chicken thighs (cook enough for leftover chicken for tomorrow), roasted sweet potatoes, peas
Sunday-
- Breakfast- Chicken nuggets and frozen waffles (don't judge, haha), whatever fruit is left
- Lunch- Burritos, chips and salsa
- Dinner- Chicken Tetrazzini, garlic toast, roasted broccoli
