Meal Planning Monday and a recipe for homemade noodles

 Home made noodles are something that I learned to make from a great Aunt. She would make big batches and give them away to anyone who wanted any. They take a little time to make, especially the first time, but they make great soup! Do you have any recipes passed down that you like to fix?

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons milk
  • 1 can (14 ounces) broth or whatever soup you're making
  1. Combine flour and salt in a bowl; make a well in the center.
  2.  Beat egg and milk; pour into well.
  3.  Stir to form a stiff dough. Turn onto a well-floured surface; roll out to desired thickness. *Noodles will grow during cooking, so they end up longer and fatter than when you put them into the boiling soup, so make sure you roll them a little thinner than you want the finished product.
  4.  Cut into 1/8-in. strips. Cover and refrigerate until ready to cook. 

 I usually use them for chicken noodle soup, when I have time. I will also make a chickenless chicken noodle soup that is chicken broth, onions, celery, carrots, bay leaf and homemade noodles. Somehow the homemade noodles seem to really fill you up.

I know I just made a post about us having to tighten our belts again, but life really seems to be throwing us a string of curve balls. Right now every day is literally one foot in front of the other. We are blessed to have family near by that we can call on for help, I don't know how some of you who are on your own do it! Here is our menu plan for the week.

Monday-

  • Breakfast- Scrambled egg, toast, 1/2 banana
  • Lunch- Kids eat at school, Us-Leftovers, bread and butter
  • Dinner-  Chickenless chicken noodle soup, crackers

Tuesday-

Wednesday-

  • Breakfast- PB&J toast, orange slices
  • Lunch- Kids eat at school, Us- black bean burgers, spaghetti salad, celery sticks
  • Dinner-  Sandwiches, crackers, apples

Thursday-

  • Breakfast- Peanut butter oatmeal, 1/2 banana
  • Lunch- Kids eat at school, Us- sandwiches, crackers, carrot and celery sticks
  • Dinner-Fake jambalaya , green beans

Friday-

  • Breakfast- Scrambled egg, toast, 1/2 banana
  • Lunch- Kids at school, Us- Leftovers
  • Dinner- Refried bean and cheese quesadillas, taco soup made with lentils instead of ground beef

Saturday-

  • Brunch- French toast, 1/2 pound of sausage made into patties, fruit salad (canned fruit cocktail, chopped apples, canned pineapple)
  • Dinner- Cabbage with Chicken (I use a bag of coleslaw mix to make it easier), whatever fruit we have left over, buttery rice, sweet potatoes

Sunday-

  • Brunch- Frittata, toast, fried potatoes and onions
  • Dinner-  Grilled cheese, whatever fruit or veg we have left, Tuna Pasta Salad
