Menu planning Monday and life is so busy right now

 How is menu planning going? We have been busy with lots of stuff going on in the background the last month or so, and I have been so grateful that figuring out what we are going to eat is not on my list of stressors every day. It takes a while to do on my day off, but so worth it on the crazy days. This week I don't have much time to try something new or complicated, so we are relying on some easy meals that put food in our bellies without a whole lot of effort. I am hoping soon we can add a little more variety to our diet, but at least with a plan I can feel confident that we are at least eating and eating healthy. Some weeks we just need to make it easy for ourselves and take care of our sanity!

Monday-

  • Breakfast- Scrambled eggs, frozen waffle, 1/2 banana
  • Lunch- Kids eat at school, Us- Ramen with white beans, apple
  • Dinner- Sloppy Joes (half ground beef, half lentils), tater tots, salad

Tuesday-

  • Breakfast- PB&J toast, apple slices
  • Lunch- Kids eat at school, Us- leftovers, carrot and celery sticks
  • Dinner- Chicken legs, baked potatoes, green beans

Wednesday-

  • Breakfast- Boiled egg, toast, 1/2 banana
  • Lunch- Kids eat at school, Us- leftovers
  • Dinner-  Microwave burritos, carrot and cucumber slices

Thursday-

  • Breakfast- Frozen waffle, scrambled egg, 1/2 banana
  • Lunch- Kids eat at school, Us- Microwave burritos, canned pineapple
  • Dinner- Vegetarian baked spaghetti, asparagus

Friday-

  • Breakfast- Scrambled egg, toast, canned pears
  • Lunch- Kids at school, Us- Leftover spaghetti, green beans
  • Dinner- Black bean burgers, roasted potatoes, corn

Saturday-

  • Brunch-  French toast,cooked apples
  • Dinner- Potato soup, fried bologna sandwiches

Sunday-

  • Brunch- French toast, fruit salad
  • Dinner-  Vegetable soup using up whatever vegetables are left, egg salad sandwiches
