School's out for my kiddos! That means I am going to have to add kids' lunches to my plan. Some days of the week they will eat at home, other days they will pack their lunch to take childcare. The Snap/ food stamp program budgets about $1.39 per person, per meal. So for a family of four can have $5.56 per meal, or $16.68 per day. I use this info to budget our grocery money, some days we spend more than $16.68 per day, others we will spend less so it balances out. It definitely takes work to make sure I have money at the end of the month for that last week of groceries. Sometimes I hit it right on the nose, others...not so much. Having some shelf stable meals in the cupboard helps with those short months.
Here is our plan for this week. How is menu planning going for you?
Monday-
- Breakfast- Scrambled egg, toast, 1/2 banana
- Lunch- Kids- Sandwiches, pretzels, apple slices Us- Leftovers
- Dinner- Ham, potatoes and green beans
Tuesday-
- Breakfast- Fried egg and cheese breakfast sandwiches, apple slices
- Lunch- Sandwiches, pretzels, carrot and celery sticks
- Dinner- Spaghetti, salad, garlic toast
Wednesday-
- Breakfast- Scrambled eggs, toast, 1/2 banana
- Lunch- Turkey and cream cheese roll ups,pasta salad
- Dinner- Vegetarian pot pie, baked beans
Thursday-
- Breakfast- peanut butter and jelly toast, 1/2 banana
- Lunch- Ramen with white beans and spinach
- Dinner- Chicken legs, roasted broccoli, rice
Friday-
- Breakfast- cereal, banana
- Lunch- Boiled eggs, pasta salad
- Dinner- Chicken fried rice, pineapple
Saturday-
- Breakfast- Cereal, banana
- Lunch- Cleaning up all the leftovers
- Dinner- Chili Mac, peas
Sunday-
- Breakfast- Breakfast Pizza
- Lunch- Leftover chili Mac, fruit salad with whatever is on hand
- Dinner- Grill out with hot dogs and Italian sausages, other people are bringing the sides
