My family loves my version of schnitzel. I use the cheapest boneless pork chops for this recipe as they will be pounded thin, tenderizing them.
Shnitzel
- Trim any big pieces of fat
- Pound pork chops thin.
- Dredge in a mixture of flour, salt, pepper and garlic powder.
- Fry in shallow oil about 3 minutes per side. The meat cooks quickly, you are trying to get the color you want on the breading.
- Drain on paper towels
Shnitzel can be eaten by itself, or my husband likes to make a sandwich with mustard and pickles. Some people also use bread crumbs as part of the breading, but we like it like this, so that's what I do. Plus it saves on one more ingredient to buy. I doubt this is authentic in anyway, but we like it and my kids love the word shnitzel ;)
Monday-
- Breakfast- Pancakes, 1/2 banana
- Lunch- Kids- Sandwiches, pretzels, apple slices
- Dinner- Schnitzel, mashed potatoes and green beans
Tuesday-
- Breakfast- Fried egg and cheese breakfast sandwiches, apple slices
- Lunch- Sandwiches, pretzels, carrot and celery sticks
- Dinner- Southwestern Casserole only using 1 pound of hamburger, salad
Wednesday-
- Breakfast- Leftover pancakes, 1/2 banana
- Lunch- Leftovers, apple slices
- Dinner- Hot dogs, pasta salad, corn
Thursday-
- Breakfast- peanut butter and jelly toast, 1/2 banana
- Lunch- Ham and cheese roll ups, carrots and celery sticks, boiled egg
- Dinner- Scalloped potatoes topped w/ bacon bits, green onions and sour cream, baked beans, peas
Friday-
- Breakfast- cereal, banana
- Lunch- Leftover hot dogs and baked beans, applesauce
- Dinner- Sausage fritatta, fried potatoes and onions
Saturday-
- Breakfast- Pumpkin apple muffins, fried eggs
- Lunch- Cleaning up all the leftover/ sandwiches
- Dinner- Chicken sandwiches, fries, fruit and veggie tray
Sunday-
- Breakfast- Muffins, eggs
- Lunch- Macaroni and cheese, deviled eggs, fruit salad with whatever is on hand
- Dinner- Salad bar- salad with choices of vegetables, cheeses, lunchmeats, dressings and chopped egg, garlic toast
