Meal Planning Monday

  Aaaack! I am sorry this is late! Here is Monday's post.

Going into the grocery store every week is starting to give me anxiety! Between wondering if they will have what I need and wondering how much it will cost this time, a new layer of stress is added to an already stressful job. As prices rise, it is only going to get harder to try to eat healthy on whatever budget you have. If inflation prices are pushing you past your limits and you have cut everything you can cut, it might be time to take advantage of some of the charitable organizations near you. 2021 has been hard in a different way than 2020 was, and I don't see it changing anytime soon. 

 It is time to revisit the way we eat again. I am going to have to come up with more meatless meal ideas I think, how to use the most inexpensive ingredients, and fit it in around my work schedule. This week's menu plan is still using up the pork roast and chicken leg quarters I bought in a big size, I didn't really have time to come up with some new recipes to try yet, but it is on my to do list for this week. We all know some of the cheapest foods are also the unhealthy ones, so I am going to be working on finding ways to stretch the healthy foods with some of the cheapest (looking at you Save a lot Mac and cheese!) and see if I can keep feeding us!  Monday-

  • Breakfast- Cinnamon toast,  banana
  • Lunch- Mac and cheese with hot dog coins, grapes
  • Dinner- Shredded BBQ pork sandwiches, fries, salad

Tuesday-

  • Breakfast- Scrambled eggs, toast, grapes
  • Lunch- Leftover pork sandwiches, crackers, carrots and celery
  • Dinner- Spaghetti, green beans, garlic bread

Wednesday-

  • Breakfast- Cinnamon toast, banana
  • Lunch- Sandwiches, pretzels, grapes
  • Dinner- Baked chicken leg quarters, tater tots, peas

Thursday-

  • Breakfast- Peanut butter oatmeal, canned pears
  • Lunch- Sandwiches, pretzels, carrots and celery
  • Dinner- Frittata, toast, fruit salad

Friday-

  • Breakfast- peanut butter toast, banana
  • Lunch- Pepperoni and cheese roll ups, crackers, canned peaches
  • Dinner- Loaded microwave baked potatoes, baked beans, corn

Saturday-

  • Breakfast- Frozen waffles, Orange juice
  • Lunch-  Bean and cheese quesadillas, salsa
  • Dinner- Brown Sugar pork roast, rice, broccoli

Sunday-

  • Breakfast- Biscuits and gravy, applesauce
  • Lunch-  Ramen noodles cooked in microwave, veggies and dip
  • Dinner- Pork stir fry
