Shelf Stable Saturday And A Dessert Recipe to Try

I don't make a lot of dessert. Once in a while I'll make some box mix brownies, mix up some instant pudding or buy some ice cream if it's on sale. The money spent on dessert right now is better spent on foods that nourish us and keep us healthy. We definitely do desserts for special occasions and birthdays, but it is not a daily or weekly event. Having a shelf stable dessert would be super helpful for times that money is short but we just need something sweet.

 In checking out this cookbook I found a shelf stable dessert that seems super easy with not a lot of ingredients and even uses fruit. It would be a nice quick dessert to make with little effort.

Pineapple Angel Food Cake

1 box of Angel Food Cake
1 20 ounce can of crushed Pineapple
  1. Preheat oven to 350 degrees
  2. Grease 13 x 9 inch pan
  3. Pour can of Pineapple into pan juice and all, DO NOT DRAIN
  4. Dump cake mix on top of pineapple and stir to mix until moistened
  5.  Bake 30 minutes
  6.  Top with Whipped cream if you want

Peanut Butter Cookies

1 cup of smooth peanut butter
1/2 cup brown sugar
1 egg (or use powdered egg substitute)
1 teaspoon baking soda
  1.  Preheat oven to 325 degrees
  2. Mix ingredients and break into 12 pieces
  3. Roll into balls and place on cookie sheet
  4. Gently press down with fork to make criss cross pattern
  5. Bake 8 minutes
