This week’s big batch cooking was a batch of refried beans. I soaked the pinto beans over night, cooked them all day in the crockpot, drained most of the water off and then mashed them. I added a teaspoon of salt, a teaspoon of garlic powder and a teaspoon of cumin, and they are delicious. We will be using them for microwave burritos, quesadillas, and a Mexican inspired pizza. I can’t wait.
I have been lucky the last couple of weeks to score meat markdowns at our Save A Lot, both times it has been pork loin sliced into “chops” so we’ve been having them a lot lately. I changed what day and time I shop and so far it has scored us some savings on meat and produce by buying what got marked down that morning. The meat goes straight into the freezer and the markdown produce gets eaten first. This week I got lettuce and cucumbers marked down, there was a lot of lettuce marked down, I think it is because it went up so much in price and people didn’t want to pay that much for it. I hate that it hurts the store, but I don’t want to pay that much either. I’m sure the store will adjust how much they order, but for now I am benefiting from the produce that’s not selling.

- Breakfast- Peanut butter toast, banana
- Lunch- Kids eat at school, us- leftover quesadillas, pretzels, canned fruit
- Dinner- Pork chops, tater tots, salad
Wednesday-
- Breakfast- Scrambled eggs, toast, apple slices
- Lunch- Kids eat at school, us- sandwiches, pretzels, carrots and celery sticks
- Dinner- Bean and rice burritos, homemade pico de gallo, tortilla chips
Thursday-
- Breakfast- cinnamon toast, boiled egg, banana
- Lunch- Kids eat at school, us- Leftover burritos
- Dinner- Hot dogs, Mac and cheese, steamed broccoli
Friday-
- Breakfast- Oatmeal, canned pears
- Lunch- Kids eat at school, us- leftovers or sandwiches, canned fruit
- Dinner- Mexican inspired pizza- crust topped with refried beans, taco sauce and cheese, served with lettuce, tomato, avocado, sour cream
Saturday-
- Breakfast- Fried eggs, fried potatoes and onions
- Lunch- Pizza rolls, veggie tray
- Dinner- Spaghetti and green beans
Sunday-
- Breakfast- Frittata, toast, fruit
- Lunch- Pork loin roast, mashed potatoes, peas
- Dinner- Clean out the fridge
