Monday Meal Planning, a Recipe For Tuna Pasta Salad and Recipes for Cold Salads on Hot Days

 This week our kids are off to a week long free theater camp that has a show at the end. They are doing a shortened version of "The Lion King" and are all very excited. Even the kid who gets to play grass, haha. They have to pack their lunch so I have been looking for ideas that will fill them up and give them plenty of energy, but cost less than a lunchmeat and cheese sandwich. It is also supposed to be stupid hot here this week, going from low 80's to mid to upper 90's over night tonight so I am trying to find foods to keep us hydrated and cool. We don't have air conditioning, so the kids are double glad for day camp as it does! 

 I really hope this week goes well for everyone. Stay strong, share something with someone else, even if it is just a smile and take it day by day.

 

 Tuna Pasta Salad

Ingredients

  • 2-1/2 cups small pasta shells, cooked and drained
  • 1 can (5 ounces) light tuna in water, drained and flaked
  • 1 large carrot, shredded
  • 1/4 cup chopped onion
  • 3/4 cup mayonnaise
  • 1/4 cup milk
  • 1 tablespoon lemon juice
  • 2 teaspoons prepared mustard
  • 1 teaspoon dill weed
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Snipped fresh dill, optional

Directions

  1. In a large bowl, combine the pasta, tuna, carrot and onion. Combine remaining ingredients; whisk until smooth. Pour over pasta mixture; toss to coat. Cover and refrigerate for 1-2 hours. If desired, garnish with fresh dill.
Macaroni Cole Slaw - If you have a favorite slaw dressing recipe, feel free to use that instead of the dressing from the recipe.
Southern Style Potato Salad- Beth gives lots of options if you want or need to substitute any ingredients
Crisp Cucumber Salsa- This calls for several ingredients, but not a lot of any one of them, so once you make the initial investment, you can make a fresh batch of this several times. Or can be a good way to use up ingredients leftover from something else
Cowboy Caviar- uses two kinds of beans making it especially hearty

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch- Pizzadilla, pretzels, boiled egg, grapes
  • Dinner- Slow cooked pork roast, microwave baked potato, corn

Tuesday-

  • Breakfast- Egg and cheese breakfast sandwiches, banana
  • Lunch-  Jiffy Corn Dog Muffins, crackers, grapes
  • Dinner- Tuna Pasta Salad, pickles, garlic toast, watermelon

Wednesday-

  • Breakfast- Eggs, toast, banana
  • Lunch- BBQ pulled pork sandwiches using leftover roast, pretzels, grapes
  • Dinner- Mac and cheese with the rest of the hot dogs, garlic toast, watermelon

Thursday-

  • Breakfast- Egg and cheese breakfast sandwiches, banana
  • Lunch-  Leftover Pasta Salad,cheese and crackers, pickles
  • Dinner- Pork, bean and rice burritos, chips and Crisp Cucumber Salsa

Friday-

  • Breakfast- Toast, egg, banana
  • Lunch- Pb & J sandwiches, pretzels, boiled egg, grapes
  • Dinner- Easy Pan Pizza, chips, veggies and dip

Saturday-

  • Brunch- Fried bologna breakfast sandwiches, fried potatoes and onions
  • Dinner- Meatball subs using frozen meatballs, chips, veggies and dip

Sunday-
