 Gas prices have gone down a little, but not to the point that it is any easier to afford anything else. People think that now that prices have come down some, things are better. But they are not better to the point that we can all go back to living the way we used to. At least not at our house. People's savings have been drained. Any ground people gained with the stimulus checks has surely been lost. It is so hard to watch your savings just drip, drip, drip away. Food stamps and Snap dollars are no longer enough to cover food budgets. Food pantries are being hit from both directions, more demand and less donations. People who have been able to scrape by up until now find that there are fewer and fewer options open to them. 

 One option I have been looking in to is branching out into recipes from other cultures. I only have so many rice recipes that my family wants to eat, and I would like to use the wisdom of other cultures as inspiration. My problem is that I don't want to spend money on ingredients only to find out we don't like it. That is a whole meal down the drain. I find recipes that look tasty, but then am afraid to try them. 

How do you guys find ways to try new recipes? I would love it if you left me some ideas in the comments!

 The stores are not really having any good sales this week except maybe fresh vegetables. I am cooking a big batch of pinto beans this week. I also bought a pound of hamburger and a pork loin for $1.99/ pound that I had the meat cutter slice half and leave the other half as a roast. This works out better as far as edible meat per dollar than chicken legs costing $1.49 a pound, so pork it is this week!

 

Monday-

  • Breakfast- Leftover pancakes, strawberries
  • Lunch- Pasta salad, crackers, carrots and celery sticks
  • Dinner- Bean and cheese quesadillas, salad

Tuesday-

  • Breakfast- Oatmeal, banana
  • Lunch-  Sandwiches, pretzels, cucumber slices
  • Dinner- Pork Chops, Creamy Garlic Rice, corn on the cob, biscuits

Wednesday-

  • Breakfast- Eggs, toast, banana
  • Lunch-  Pasta salad, crackers, carrots and celery sticks
  •  Dinner- BBQ Beef and Beans (I'll use premade bbq sauce and pinto beans), coleslaw

Thursday-

  • Breakfast- Oatmeal, banana
  • Lunch-  Leftovers or sandwiches, crackers, cucumber slices
  • Dinner- Four Layer Burrito, salad

Friday-

  • Breakfast- Toast, egg, banana
  • Lunch- Four layer burritos, crackers, canned peaches
  • Dinner- Sloppy joes with hamburger and lentils, tater tots, coleslaw

Saturday-

Sunday-

  • Brunch- Pancakes, homemade pancake syrup, scrambled eggs
  • Dinner- Leftover pork and beans over rice, green beans, garlic toast
