Monday Meal Planning and a Recipe and Ideas for Biscuit Cups

 I made my menu plan for the week as usual before going to the store, but had to radically change it once I was there. There were things I couldn't find, like spaghetti noodles or potatoes. The meat that was supposed to be on sale was all sold out. It was super stressful. I ended up spending more than I wanted to because I had no new plan. I didn't want to turn around and go home and make a new plan so I made one on the fly. Shopping was tough before, it is anxiety inducing for sure now.

 This recipe is from Betty Crocker. It calls for Bisquick, but you could also use Jiffy, or a homemade biscuit recipe. You can use your favorite BBQ sauce, manwich, or a homemade version. I made these last week with baked beans.This week I'm going to use my homemade lentil sloppy joe as filling, which is cooked lentils, hamburger, ketchup, brown sugar, and vinegar. Looking forward to them!

 BBQ Cups

 

 

Ingredients

  • 1 lb lean (at least 80%) ground beef
  • 1/4 cup finely chopped onion
  • 1 cup hickory smoke-flavored barbecue sauce
  • 2 1/4 cups Original Bisquick™ mix
  • 1 cup shredded Cheddar cheese (4 oz)
  • 2/3 cup milk

Steps

  • Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in barbecue sauce; cook until mixture just begins to bubble.
  • In medium bowl, stir Bisquick mix, 1/2 cup of the cheese and the milk until soft dough forms. Spoon about 2 tablespoons dough into each muffin cup. Press dough in bottom and up sides of each cup. Spoon 2 tablespoons beef mixture into each cup.
  • Bake 8 to 10 minutes or until top edges of cups are golden brown. Sprinkle each with remaining cheese. Let stand 5 minutes; remove from pan. 
     
     

    Monday-

    • Breakfast- Leftover pancakes, banana
    • Lunch- Sandwiches, pretzels, grapes
    • Dinner- Lentil Sloppy Joe Biscuit Cups, salad

    Tuesday-

    • Breakfast- Oatmeal, banana
    • Lunch-  Ramen, boiled egg, carrots and cucumber slices
    • Dinner- Chicken fried rice, pineapple

    Wednesday-

    • Breakfast- Toast, egg, banana
    • Lunch-  Leftover fried rice, grapes
    •  Dinner- Pasta and spaghetti sauce, garlic bread, green beans

    Thursday-

    • Breakfast- Oatmeal, boiled egg, banana
    • Lunch-  Leftovers, bread and butter
    • Dinner- Chickenless chicken noodle soup, crackers

    Friday-

    • Breakfast- Toast, egg, banana
    • Lunch- Sandwiches, pretzels, carrots and celery
    • Dinner- Chicken sandwiches, tater tots, veggies and dip

    Saturday-

    • Brunch- Frittata biscuits, fruit cocktail
    • Dinner- Fettuccine Alfredo, peas, deviled eggs, garlic toast

    Sunday-

    • Brunch- Pancakes, homemade pancake syrup, scrambled eggs
    • Dinner- Meatloaf, boxed scalloped potatoes, roasted broccoli, bread and butter
