Sorry for such a long blogging break. We are going through some stuff, and like last time, most of our meals ended up being hotdogs, spaghetti, carrot sticks, microwave potatoes or burritos, and sandwiches as well as a couple of meals gifted by family and friends. Trying to get back on track this week. The weather is warming up here, so this is probably the last week of oven meals for us. I'm glad I was able to stick to our budget while we were working through things, but that is mostly because we were gifted a few meals. Convenience foods are so much more expensive than homemade, except box mix mac and cheese, I maintain that is one convenience food that actually saves money. We could not have stayed on budget without help. On the surface, convenience goods seem like they cost less. Shelf Stable Saturday and a recipe for creamy vegetable soup

Creamy Vegetable Soup 2 cans of mixed vegetables, drained and rinsed 2 cans condensed cream soup, any flavor (mushroom, chicken, broccoli, potato) 1 can chicken broth or 1 cup water and 1 chicken bouillon cube 4 cups of water Salt and pepper to taste (I like to use seasoning salt, like Lawry's) Dump all ingredients into a soup pot Bring to a boil then turn to low and simmer (barely bubbling) for 20 minutes. Stir occasionally If you want to cook in a microwave, use half of all ingredients (I don't have a microwave safe bowl big enough to cook that much soup in) and cook for 8-10 minutes, stopping and stirring every few minutes.
