We have had some crazy times here at our house! We've had Holidays, been snowed in, without electric, no school, work closed, digging out, furnace problems, all kinds of things! But I'm back now and I have got some new recipes to try, some new thoughts on feeding my family and am looking forward to sharing with you guys.
Recently we had to revamp our usual breakfast routine. Eggs are running anywhere from $3.99 to $5.99 a dozen. Our family loves eggs, but we are going to have to find a less expensive, no brainer plan because I'm not great in the mornings. At $3.99 a dozen that makes each egg 33 cents. I use 2 eggs to make a double batch of pancakes on the weekend and that makes enough for all of us to have for breakfast twice. But if I make eggs and toast for breakfast I would use 5 eggs, 4 if I made scrambled. Making things with eggs, like pancakes and muffins is the best way to stretch them, but we lose the protein.
So I need to look at what other options I have available to me. One is to make sure we are having more protein at other meals instead of breakfast, so more proteins at lunch and dinner that cost less than eggs, or find a cheaper protein to serve at breakfast.
One of the ideas that actually came from one of the kids is to have a grilled cheese for breakfast! At $3.99 for a dozen eggs, I can buy sliced cheese for less and the kids are loving it! Another thing I plan to do is to substitute eggs and frittata on the weekends with biscuits and gravy. When sausage is priced at less expensive for 2lbs of sausage than a dozen eggs, biscuits and gravy is more affordable for 12 serves.
I would love some more breakfast protein ideas that are less expensive than eggs. It used to be there was literally no protein cheaper than eggs, but now I am going to have to do a lot more math!
