Monday Meal Planning and Pancakes in School Lunches

 You guys!!! So I scored some more breakfast sausage links for cheap this week, so for lunches, the kids are getting pancakes and sausage! How in the world did I not think of this before!!! So I’m making some silver dollar blueberry pancakes with a touch of syrup already mixed in. Then packing them in the lunch boxes with a sausage link! How stinking cheap is that?!? This is one of those duh moments for sure 🙄 

I got the idea because my child came in Sunday evening and asked could they have one of the leftover pancakes. I said ok, and he proceeded to get one out of the fridge and wander away eating it COLD. Thus an idea was born.

 Another deviation from our standard menu for this week, our IGA had all these big containers of strawberry banana flavored yogurt for 99 cents! So I bought like 5 cartons to spread out over the next two weeks for breakfasts. It’s nice to have a taste of change!

  10 pound bags of frozen chicken leg quarters were on sale this week for $7.90, making them 79 cents a pound. This was the best price for meat, so I happily bought a bag to make into two dinners. One, I'm going to bake everyone their own quarter, so happy! The rest I am going to boil and pick off the bone. Then I'm going to put all of the leftover skin, bones  and the water I boiled them into my metal strainer set down in my crockpot. I will fill the crockpot the rest of the way with more water and add a carrot. It will cook all night to make a broth I will use later in the week with the shredded chicken. In the morning, all I have to do is pull the metal strainer out and discard whats left and cool and package the broth. I've done this a few times, but it has been a while. Then when I am ready to make soup, I will use this broth as a base and add to it as I go to make a good yummy chicken and dumplings. Usually I will add a chicken bouillon cube and a bay leaf. It's more work for sure, but the results are so good for us.

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch-   Quesadillas, carrots and celery sticks
  • Dinner- Potato Soup, Ham and Swiss Biscuits I don't usually have honey mustard around, but we have one of those little boxes that comes with chicken nuggets from McDonald's so going to use that in the recipe

Tuesday-

  • Breakfast- Peanut butter oatmeal, strawberry yogurt 
  • Lunch-  Mini blueberry pancakes, sausage link, apple
  • Dinner- Baked chicken leg quarters, roasted potatoes, roasted broccoli, bread and butter

Wednesday-

  • Breakfast- PB&J toast, banana
  • Lunch-  Quesadillas, carrots and celery sticks
  •  Dinner- Frozen ravioli with Simple Spaghetti Sauce, green beans, garlic toast

Thursday-

  • Breakfast- Peanut butter Oatmeal, yogurt
  • Lunch-  Mini pancakes, sausage link, apple
  • Dinner- One Pot Veggie Pasta, garlic toast

Friday-

  • Breakfast- Cereal, banana
  • Lunch- Quesadillas, carrots and celery sticks
  • Dinner- Chicken and dumplings cooked with onions, celery and carrot

Saturday-

  • Breakfast- Overnight Breakfast Casserole, sliced oranges
  • Lunch-  Tomato soup and grilled cheese
  • Dinner- Chicken cordon blue sandwiches using the cheap chicken patties and using up the swiss and ham from earlier in the week, Macaroni Cole Slaw 

Sunday-
