Monday Meal Planning and Trying to Manage My Feelings

 Our local IGA had these boxes of frozen burger patties, 2lbs (8) patties for $5, so I thought we would try them. That's less expensive than buying the ground beef, so I'm crossing my fingers and hoping they are good. It has been a long time since I've bitten into a nice juicy all meat burger so I'm looking forward to it! 

Once again pork chops were the cheapest meat per pound this week. I am not sad about that, haha, so I am going to fix them a couple ways this week.

 Going into the grocery store is becoming such a depressing thing, and not looking to get better any time soon.  So to combat that this week, I did a lot of scrolling through recipes on pinterest, focusing on recipes with simple ingredients. The oven baked pork chops are new to me, but with just a few ingredients, it isn't an expensive experiment. I am really drilling down on what I really need to focus on to keep my family healthy and maximize my food dollars. Making sure there are at least three serves of fruit/vegetables and some protein everyday is my absolute necessity. Some of my recipes from the past are falling by the wayside. All are delicious, but now are just too expensive to fix. I am really leaning into canned and frozen vegetables right now too and will until something changes.

  I am also trying to not keep thinking of our meal as an event. I can get really caught up in making something restaurant worthy, fancy or something for my husband to dream about all day. That is going to have to change as our meals get simpler and simpler. I need to focus my energy on making sure we are healthy, but not necessarily wowed. That is hard for me, making food for people is my love language and putting out meals that are functional versus the very best I can pull together will be an adjustment for sure.

  • Breakfast- Leftover pancakes, banana
  • Lunch-  PB&J Sandwiches, crackers, grapes
  • Dinner- Fried pork chops, mashed potatoes and gravy, bagged salad, bread and butter

Tuesday-

Wednesday-

Thursday-

Friday-

  • Breakfast- Cinnamon raisin oatmeal, yogurt
  • Lunch- PB&J sandwiches, crackers, grapes
  • Dinner- Burgers, roasted potato cubes, corn on the cob

Saturday-

  • Breakfast- Biscuits and gravy, cooked apples
  • Lunch-  Frozen pizza, veggie and dip
  • Dinner- BLT's, pasta salad

Sunday-
