Monday Meal Planning and Using up Holiday Leftovers

   I hope everyone had a great Easter! I know I am a few days late, I hope you don't mind. I really tried to have everything ready, but life got in the way. For Monday, I am planning one of my favorite meals, Ham fettuccine Alfredo. Alfredo is a simple sauce to make. I just make a roux, add milk, shaker parmesan cheese and a little garlic powder. Easy Peasy. Seriously, the whole time the ham was baking I was thinking about Monday's dinner, haha. 

 Holiday leftovers are the gift that keeps on giving. They are already cooked, so give you a leg up on the meals that come later. It also spreads out the cost, making the initial outlay for a more expensive meal work out over time. Sometimes we just have to eat the sides like they are, but usually the meat can be repurposed, which I'll do with the ham.  A few years ago, my husband and I watched a game show about remaking leftovers with Jackie Tone as the host. It was fun, I wish they had made more than one season. I think it was called "Best Leftovers Ever!". Maybe you would enjoy it, we did.

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch-  Sandwiches, crackers, apple
  • Dinner- Ham fettuccine Alfredo, roasted broccoli, garlic toast

Tuesday-

  • Breakfast-  Ham and Cheddar muffins, orange slices
  • Lunch-  homemade lunchable, carrots and celery sticks
  • Dinner- Polish sausage, scalloped potatoes, green bean casserole, bread and butter

Wednesday-

  • Breakfast- Toast, sausage link, banana
  • Lunch-  Sandwiches, crackers, apple
  •  Dinner- Frozen Vegetable Stir Fry and rice, garlic toast

Thursday-

Friday-

  • Breakfast- Toast, sausage link, banana
  • Lunch- Sandwiches, crackers, apple
  • Dinner- Black bean burgers, roasted sweet potatoes, corn

Saturday-

  • Breakfast- Fried bologna breakfast sandwiches, fruit cocktail salad
  • Lunch-  Leftovers, veggies and dip
  • Dinner-  Oven Mushroom Rice, baked beans, carrots, garlic toast

Sunday-
