Meal Planning Monday and Chicken parmesean subs

Using up some of the ingredients that came in our Farmers to Families box this week. We still have potatoes, onions, bologna, chicken patties and some sour cream. One of the meals we are going to have is one I came up with on the fly by looking at what I have on hand, Chicken parmesean subs. Since the chicken patties that came in the food box are already cooked, they just need to be warmed up, the meal will be fast to put together!

You need:

  •  Chicken patties
  •  Loaf of french bread
  •  Jar of spaghetti sauce
  •  Cheese, any kind but mozzarella is good.
  •  There aren't exact measurements for this kind of meal, just using what you have. You can use sprinkle parmesean cheese too, adds lots of flavor.
  1. Split open your $1 loaf of french bread and spread inside with butter or margarine and sprinkle with garlic powder.
  2. Stick in oven at 450 degrees to toast. Also stick in chicken patties to warm up at the same time. Keep an eye on the bread to get it toasted just the way you like.
  3. Heat spaghetti sauce on low and shred mozzarella cheese, or use cheese slices.
  4. When subs are toasted the way you like, spread sauce on the bottom bun, layer chicken patties, then shredded cheese, then coat inside of the top of the bun with more spaghetti sauce and stick back into the oven to melt cheese. I am going to make 2 loves so we have plenty for dinner and save half the second loaf for lunch the next day.

Easy Peasy

 This week I am taking some of the grocery money I saved by using food from the box to add some canned goods and a box of pasta to my cupboard. I think it is a great chance for me to build up a little cushion for a rainy day. The boxes won't last forever, I saw an article saying they would only go through May, but I want to take advantage as much as I can while they last.

Monday-

  • Breakfast- Scrambled eggs, toast, 1/2 banana
  • Lunch- Kids eat at school, Us- Ramen with white beans, apple (this was so good last week)
  • Dinner-  Loaded Baked Potato soup, fried bologna sandwiches

Tuesday-

  • Breakfast- PB&J toast, apple slices
  • Lunch- Kids eat at school, Us- sandwiches, pretzels, carrot and celery sticks
  • Dinner- Chicken parmesean subs, salad, grapes

Wednesday-

  • Breakfast- Boiled egg, cinnamon sugar toast, 1/2 banana
  • Lunch- Kids eat at school, Us- leftover sub, canned pineapple
  • Dinner- Microwave chicken quesadillas using canned chicken, cut up celery, carrots, cucumber

Thursday-

  • Breakfast- Toast, scrambled egg, 1/2 banana
  • Lunch- Kids eat at school, Us-Sandwiches, pretzels, canned peaches
  • Dinner- Smoked sausage, semi homemade scalloped potatoes, green beans

Friday-

  • Breakfast- Scrambled egg, toast, canned pears
  • Lunch- Kids at school, Us- Leftovers
  • Dinner- Chicken, bacon, ranch sandwiches, pasta salad, baked beans

Saturday-

  • Brunch-  Pancakes, sausage patties, fruit salad with whatever fruit we have left
  • Dinner- Pork chops, microwave sweet potatoes, roasted frozen broccoli, deviled eggs
