Meal Planning Monday

This week the only half way good meat sale was boneless, skinless, chicken breasts, so we are eating a lot of chicken this week. I buy the boneless breasts to put in the crockpot for salsa chicken, and I also plan to use leg quarters cut up for Monday nights dinner. Those bags of 69 cents a pound chicken leg quarters are really coming in handy. I ran into the gas station last night to grab a forgotten loaf of bread and was surprised at how empty the shelves were! There were only 3 loaves of bread and lots of bare space. I asked the lady who checked me out and she just shrugged and said she didn't know, she just puts away what comes on the truck. I ran into our dollar store and found a similar but less dramatic scene. So weird, but at least there was plenty of toilet paper!   

  I haven't run across anything missing that I have wanted or needed, but it feels so strange to see empty shelves again. It's like I can't remember what was supposed to be in that space! Are you seeing any shortages or empty shelves where you are?

  Because I am working with what is on sale, this week's menu has a lot of chicken, but at least we like chicken! Have a great week!

Tuesday-

Wednesday-

  • Breakfast- Peanut butter oatmeal, 1/2 banana
  • Lunch- Sandwiches, pretzels, cucumbers
  • Dinner- Mac and cheese, smoked sausage, broccoli

Thursday-

  • Breakfast- Cereal, banana
  • Lunch- Sandwiches, pasta salad, carrots and cucumbers
  • Dinner- Salsa Chicken in tortillas, Spanish rice

Friday-

  • Breakfast- peanut butter toast, banana
  • Lunch- Turkey and cheese roll ups, deviled eggs, fruit cocktail
  • Dinner- Frozen pizza, bagged salad

Saturday-

  • Breakfast- Pancakes, Orange juice
  • Lunch-  Leftover Salsa chicken and rice quesadillas, veggies and dip
  • Dinner- Chef Salad, crackers

Sunday-

  • Breakfast- Egg and fried bologna sandwiches, fried potatoes and onions
  • Lunch-  Frozen chicken patty sandwiches, leftover salad stuff
  • Dinner- Baked beans, semi homemade scalloped potatoes, green beans
