Menu Planning Monday and a Big Batch of Pasta Salad

 This week's big batch cooking is a big pasta salad. I make a simple one that is just pasta, vegetables and Italian salad dressing. I am planning to serve it two nights as a side, and what's left after that for lunch. The first night I am going to serve as is. The second night will add a little chopped pepperoni and some olives. For lunch I will add some canned chicken to bulk it up. I am kind of liking this cook once eat two or three times thing, I forgot how helpful it is!

Monday-

  • Breakfast- Scrambled eggs, toast, banana
  • Lunch- Kids eat at school, us- sandwiches, pretzels, carrots and celery sticks
  • Dinner- Hot dogs, pasta salad, peaches

Tuesday-

  • Breakfast-Oatmeal, banana
  • Lunch- Kids eat at school, us- turkey roll up, pretzels, canned fruit
  • Dinner- Black bean burgers, pasta salad

Wednesday-

  • Breakfast- Fried egg sandwiches, pears
  • Lunch- Kids eat at school, us-  Rest of the Pasta salad with canned chicken added, carrots
  • Dinner- Spaghetti, garlic bread, green beans

Thursday-

  • Breakfast- eggs, toast, banana
  • Lunch- Kids eat at school, us- Ramen, fruit cocktail
  • Dinner- Chicken legs, tater tots, corn on the cob

Friday-

  • Breakfast- Fried bologna sandwiches, canned pears
  • Lunch- Kids eat at school, us- leftovers or sandwiches, canned fruit
  • Dinner- Fake jambalaya, peas

Saturday-

  • Breakfast- Pancakes, cooked apples
  • Lunch- Grilled cheese and tomato soup
  • Dinner-Pork chops, mashed potatoes, broccoli

Sunday-

  • Brunch- Biscuits and gravy, scrambled eggs, applesauce
  • Dinner- Oven mushroom rice, baked beans, carrots
