Potatoes were on a great sale for Thanksgiving, so I bought lots. Good thing you can do a lot with potatoes! Potatoes are a great way to stretch your food budget or SNAP benefits, they are packed full of nutrients, can be fixed fast in the microwave and are a real comfort food.
This week I am trying a new recipe, Kielbasa and Potatoes. The recipe calls for red or yukon potatoes, I have no idea what kind of potatoes I have, I know they are not red! But we are using them anyway. In the comments it says that using another kind of potato may lead them to not hold the cube shape, but I am fine with that. I will also being using regular white onion since that is what I have and some smoked sausage from Save-a-Lot. Looking forward to it!

Wednesday-
- Breakfast- Peanut butter toast, banana, boiled egg
- Lunch- Kids eat at school, us- sandwiches, pretzels, carrots and celery sticks
- Dinner- Kielbasa and Potatoes, peas
Thursday-
- Breakfast- cinnamon toast, boiled egg, banana
- Lunch- Kids eat at school, us- Ramen noodles, canned pineapple
- Dinner- Vegetable soup, garlic toast
Friday-
- Breakfast- Oatmeal, canned pears
- Lunch- Kids eat at school, us- Leftover soup, toast
- Dinner- Pork roast, mashed potatoes, corn
Saturday-
- Breakfast- Eggs, fried potatoes and onions
- Lunch- Kids eat at school, us- leftovers
- Dinner- Baked beans, microwave baked potatoes , roasted broccoli
Sunday-
- Breakfast- Pancakes
- Lunch- Leftovers, sandwiches, whatever fruit and veg we have left
- Dinner- One pan chicken and gravy , mashed potatoes, peas
