I have been working on the blog for a while now, and it has been such a great experience for me. I have been working on the series of Shelf Stable Posts for most of that time and now I am ready to start a new series about eating healthy in a food desert. I have been doing some research on food deserts and according to the USDA: “food deserts,” are regions of the country often feature large proportions of households with low incomes, inadequate access to transportation, and a limited number of food retailers providing fresh produce and healthy groceries for affordable prices.
Food deserts usually occur in the city, but rural dwellers who have spotty access to transportation or who have to drive far using a lot of gas to get to real grocery stores, have similar problems. Almost every little town has a gas station and/ or some kind of dollar store, and sometimes it can be many more miles to a town that has an actual grocery store making it a choice between food dollars and gas dollars. Also, a lot of dollar stores now except food stamps or SNAP benefits. The same happens in urban food deserts. Usually there are dollar or corner stores, but it is not easy to get to an actual grocery store.
During my research, I came across lots of websites that explain what food deserts are, but not much practical advice. Seeing that, I decided that my next series would focus on how to eat healthy in a food desert. I am excited about that! I hope these new posts come in handy to anyone who finds themselves shopping mostly in gas stations, dollar stores or corner stores. I hope you follow along and throw in any tips you have!
Here is this week's menu plan. We are eating a lot of soup, it helps us save money and warms us up in this drafty old house.
Monday-
- Breakfast- Cinnamon toast, banana
- Lunch- Sandwiches, pretzels, carrot and celery sticks
- Dinner- Ham, potatoes, onions and green beans all cooked together in the crockpot with some chicken bouillon, biscuits
Tuesday-
- Breakfast- Eggs, toast, banana
- Lunch- Kids eat at school, us- Sandwiches, pretzels, apple
- Dinner- Vegetable Barley Soup, garlic toast
Wednesday-
- Breakfast- Peanut butter toast, banana
- Lunch- Kids eat at school, us- Leftover soup, crackers
- Dinner- BBQ Chicken legs, coleslaw, microwave baked potato, biscuits
Thursday-
- Breakfast- eggs, toast, banana
- Lunch- Kids eat at school, us- Leftovers, boiled egg
- Dinner- Four Layer Burrito, chips and salsa
Friday-
- Breakfast- eggs, toast, banana
- Lunch- Kids eat at school, us- leftover burritos, celery and carrot sticks
- Dinner- Pasta Fagioli Soup , garlic toast
Saturday-
- Breakfast- Pancakes
- Lunch- Leftover soup, grilled cheese, fruit smoothies
- Dinner- Frittata, toast, fruit salad
Sunday-
- Breakfast- Pancakes
- Lunch- Tuna Pasta salad, fruit plate
- Dinner- Chicken noodle soup with homemade noodles and without the chicken, crackers
