Monday Meal Planning and Incorporating More Eggs Into Our Meal Plan

 I know I am a day late with our menu plan, I just ran out of time to get the post up, sorry! 

 This week we are still eating blueberries! Our Save-a-Lot still had pints on sale for 99 cents, so I bought more. The kids are slowing down on them now, they must be getting their fill. That is fine, I am freezing any I can for later. 

 We are also eating a lot of eggs this week, Kroger had a great sale on 18 count eggs for $1.47 limit 5, so I bought 5! It looks like a LOT of eggs, but they will keep for a while in the fridge, and our fridge has plenty of room in it for right now. Here is a link to an article about different ways to prepare eggs. We already eat a lot of eggs in our diet for breakfasts, so I think this week, using our glut of eggs I am going to switch things up and feature eggs for dinners and stick more to toast and oatmeal for breakfasts so that we don't feel like we are on egg overload. Regular price for eggs right now at my local Save-a-lot is $2.79 a dozen, which is so very much more expensive than they used to be, but that still only works out to 23 cents an egg, making it an inexpensive protein per person. Even though $2.79 feels so very expensive, it still is a more frugal choice than meat.

 Here is our menu plan for this week, have a good one!

Monday-

  • Breakfast- Leftover Pancakes, blueberries
  • Lunch- Kids eat at school, us- sandwiches, carrots and celery sticks, pretzels
  • Dinner-  Cobb salad using the little bit of ham that's left, garlic toast

Tuesday-

  • Breakfast- Oatmeal, banana
  • Lunch- Kids eat at school, us- Ham and cheese roll up, crackers, canned peaches
  • Dinner- Spaghetti Carbonara,  bread and butter, roasted broccoli

Wednesday-

  • Breakfast- Cinnamon toast, banana
  • Lunch- Kids eat at school, us- Sandwiches or leftovers, pretzels
  • Dinner- Pork fried rice, pineapple

Thursday-

  • Breakfast- Oatmeal, blueberries
  • Lunch- Kids eat at school, us- Leftover,carrots and celery
  • Dinner- Bacon Bit Breakfast Pizza, garlic toast, peas

Friday-

  • Breakfast- Peanut butter toast, banana
  • Lunch- Kids eat at school, us-sandwiches or leftovers, pretzels, carrots and celery
  • Dinner-Hot dogs, mac and cheese, green beans

Saturday-

  • Brunch-French toast, leftover bacon, cooked apples
  • Dinner- Tacos made with half ground beef/half lentils

Sunday-
