I'm planning to use up some more of our chicken quarters this week. I'm going to boil them, strain the broth and pick the meat off the bones to add to dumplings cooked in the broth. I'll also reboil the bones, skin and cartilage to make a chicken broth that I will freeze after straining to use in making rice or soup at another time. It's kind of time consuming, but everything costs something, either time or money, and money is in seriously short supply. I don't have a lot of time either but what are you going to do? There are about a million tips, blog posts and you tube videos out there telling you how to make broth from the leftovers after picking the meat off. It's pretty simple, you just boil them to death and strain. Lots of people add vegetables or vegetable scraps to up the nutritional value. I just try not to overthink it.
My Kroger has Whole Pork Shoulder on sale for $0.99/lb. I showcased a blog here that explained how to roast a pork butt, well apparently you use the exact same method for shoulder, and I am excited to try it. The only thing that bothers me about this weeks menu is that it is a lot more work for me! I guess that's life. The bones from the shoulder can be boiled down for broth too, and at this point I am willing to try almost anything to feed us.
For all of you on a strict food budget, SNAP benefits or using Food Stamps, it is going to be ok. You just do what you need to do. Choose nutrient dense foods like fruits, vegetables and beans when you can, but give yourself permission to do what you need to do. It feels so bleak right now, but our job is to buy what we can to feed our families and press on.

- Breakfast- Oatmeal, applesauce
- Lunch- Kids eat at school, us- Microwave burritos , pretzels, canned peaches
- Dinner- Hot dogs, mac and cheese, peas
Friday-
- Breakfast- Toast, egg, banana
- Lunch- Kids eat at school, us- Sandwiches, pretzels, applesauce
- Dinner- Roasted pork shoulder, rice and carrots
Saturday-
- Brunch- Pancakes, homemade pancake syrup, scrambled eggs
- Dinner-BBQ Pork sandwiches,tater tots, corn
Sunday-
- Brunch- Pancakes, homemade pancake syrup, scrambled eggs
- Dinner- Pork and Rice stuffed burritos served with refried beans, chips and salsa
