Monday Meal Planning

 I know I am late again, two weeks in a row! We are still collecting the free snacks from the library, the milk, cheese, juice boxes and applesauce are the most popular. The jerky, wow butter and craisins, I need to find a way to use them consistently. I would love any suggestions you have! Our menu this week is a little repetitive, mostly because nothing is going on sale like it used to. I am having to definitely plan our meals and shopping so much more now than I used to, and I have always been a planner. I am so thankful that I have the ability to shop at multiple stores and I have such compassion for all of you that are forced to eat and shop in food deserts or just aren't able to take advantage of multiple shopping opportunities. 

 Eggs have gotten so expensive, which is a staple protein in our house. This is so frustrating for me as I have been really counting on this inexpensive source of protein. Also, school will be out soon and I won't be able to rely on school lunches. Aaaannnnddd, the news keeps talking about global famine. Drastic changes may be coming down the pike for our eating patterns, which is so hard when you have kids at home. Kids, and sometimes spouses, don't like change, so having to make changes to one of our family's basic comforts is a daunting task. Over the last few months we have been reducing the amount of meat we consume to help save money. That seems to be going ok, although my husband misses meat more often than the kids do.

 My plan has been to have a couple meals with meat in them every week, spreading them out over the week. I make sure that on the weekends when I am making two meals instead of three, we eat brunch and then dinner on the early side. If anyone gets hungry, they can snack on things we get from the library or crackers and peanut butter. I try to make everyone's favorites pretty often so there is not much moaning.

Monday-

Tuesday-

  • Breakfast- Oatmeal, applesauce
  • Lunch- Kids eat at school, us-Thai Ramen, carrots and celery sticks, crackers
  • Dinner- Spaghetti, green beans, garlic toast

Wednesday-

  • Breakfast- Toast, egg, banana
  • Lunch- Kids eat at school, us- Sandwiches or leftovers, pretzels, carrots and celery sticks
  • Dinner-  Four Layer Burrito, chips and salsa, corn

Thursday-

Friday-

  • Breakfast- Toast, egg, banana
  • Lunch- Kids eat at school, us- Hot dogs, pretzels, applesauce
  • Dinner- Scalloped Potatoes, baked beans, broccoli

Saturday-
