Monday Meal Planning, Batch Cooking and a Chocolate Treat

 

This week I am making a batch of taco meat with lentils. I am planning to use it in a couple of meals. I'm cooking a pound of hamburger with lentils, an onion and taco seasoning. Then I will divide it into two portions, one to be used in the taco spaghetti and the other to use to make taco bowls with rice, black beans, cheese, tomatoes and cilantro.  None of the cilantro will go to waste since it will go in both the spaghetti and the rice bowls.

I am also cooking a big batch of rice to be used in the taco bowls and a stir fry.

Here is our menu plan for this week:

Monday-

Tuesday-

Wednesday-

  • Breakfast- Eggs, toast, banana
  • Lunch- Tuna Pasta salad, crackers, carrots and celery sticks
  •  Dinner-  One Pot Taco Spaghetti, salad

Thursday-

  • Breakfast- Oatmeal, banana
  • Lunch-  Leftovers or sandwiches, crackers, carrots and celery sticks
  • Dinner- Easy Vegetable Stir Fry

Friday-

  • Breakfast- Toast, egg, banana
  • Lunch- Sandwiches or Ramen, crackers, canned peaches
  • Dinner- Vegetable Casserole, baked beans, biscuits

Saturday-

  • Brunch- Eggs, fried potatoes and onions, toast, sliced tomato
  • Dinner- Cabbage with Chicken, (to use up the rest of the cabbage) bread and butter, corn

Sunday-

  • Brunch- Pancakes, homemade pancake syrup, scrambled eggs
  • Dinner-Meat ball subs made with black bean burger mix, chips, veggies and dip
