This week I bought a pork loin on sale and had the meat cutter cut half up as a roast and slice the other half. Looking forward to using this several ways over the next couple of weeks! Also have 2 half pound packages of ground beef and I am so excited. I never thought we would be at a place that I would be so excited about meat, but here we are!
I really hope you are finding ways to have a little sunshine in your days. The news is so overwhelming, the relentless inflation is overwhelming, life sometimes feels overwhelming. Make sure you are taking time to take care of yourself. Turn off the phone alerts, read a book, cuddle up and watch a funny movie, anything that gives you a little escape. We've got this!
Monday-
- Breakfast- Leftover pancakes, banana
- Lunch- Sandwiches, crackers, grapes
- Dinner- Taco bowls- rice, seasoned ground beef and black beans, lettuce, tomato, cheese, sour cream
Tuesday-
- Breakfast- Toast, eggs, banana
- Lunch- Microwave burritos using up leftovers, crackers, carrots and cucumber slices
- Dinner- Spaghetti, green beans, garlic toast
Wednesday-
- Breakfast- Oatmeal, banana
- Lunch- Sandwiches, crackers, grapes
- Dinner- Pork Fried Rice, Canned Pineapple
Thursday-
- Breakfast- Toast, egg, banana
- Lunch- Leftovers, bread and butter, canned peaches
- Dinner- Scalloped Potatoes, deviled eggs, peas, garlic toast
Friday-
- Breakfast- Oatmeal, banana
- Lunch- Sandwiches, crackers, carrots and celery
- Dinner- Mini Meatball subs made in hot dog buns, chips, veggies and dip
Saturday-
- Brunch- Fried egg and bologna sandwiches, tater tots, cooked apples
- Dinner- Schnitzel, Colcannon, corn, bread and butter
Sunday-
- Brunch- Pancakes, homemade pancake syrup, scrambled eggs
- Dinner- Pulled pork sandwiches, macaroni and cheese, coleslaw
