Ugh Ugh Ugh, Change of Menu Plan

 My oven stopped working today. I was going to bake a box of brownies and it just wouldn't preheat. Of course I didn't discover this until the mix was made and ready to go into the oven. Luckily my neighbor happily baked them for me, for a brownie! But that leaves me with two problems. 1. Now I can't bake anything. 2. I have to figure out what to do about the stove and pay for it.

 To tackle my first problem, I am going to have to change the menu plan to use the ingredients I have already bought. So tonight's dinner didn't need the oven, so that is fine. Tomorrow night though, I was going to make One Pan Chicken and Gravy in the oven. Instead, I am going to fry the chicken (I hate frying chicken :/) and instead of using gravy on the rice, make Creamy Garlic Rice. It will be a lot more work, but I won't have to buy anything new. For Thursday night, I am going to use the directions from DIY Joy to cook the biscuits on the stove. Then I'm going to split them open and top them like little pizzas, pop them into the microwave for a few seconds to melt the cheese. I'll also microwave the broccoli, our I could cook it in a pot. For Saturday, I am going to cook the spaghetti like normal, then mix all the rest of the ingredients except the mozzarella cheese in a pot and heat up and serve it like regular spaghetti topped with the shredded mozzarella. I am leaving the eggs out entirely. That will get us through this week without having to buy more food.

 My second problem is what to do about the stove. Googling tells me the issue might be the heating element. The stove top works fine, it just won't bake. So that is going to be the first thing to try. It looks pretty easy on you tube to replace the element. So fingers crossed they aren't expensive and is actually the problem! Cause honestly, if it isn't that, then I don't think it will be something we can fix without a professional.

Here is my revised menu plan using what I already bought, just in a different way!

Wednesday- 

  • Breakfast- Peanut butter toast, banana
  • Lunch- Ramen with spinach and mushrooms, crackers, carrots
  •  Dinner- Fried chicken, Creamy Garlic Rice, Peas, bread and butter

Thursday-

  • Breakfast- Oatmeal, banana
  • Lunch- Sandwiches, crackers, carrots
  • Dinner- Pizza biscuits, frozen broccoli, garlic toast

Friday-

  • Breakfast- Peanut butter toast, banana
  • Lunch- Pepperoni and cheese tortilla rollups, crackers, canned pineapple
  • Dinner-Chicken Enchilada soup, bread and butter

Saturday-

Sunday-

  • Brunch- Pancakes, homemade pancake syrup, scrambled eggs, canned pears
  • Dinner-  Chicken taco bowls (Rice, shredded chicken, black beans, spinach, tomatoes, cheese, sour cream)
