I am sorry for the long blog break! We have had some family events that ate up all my time and energy for the last month, but things are settling down and I am so glad to be back! I continued to menu plan to keep my sanity, and there were more meals than I would have liked that consisted of sandwiches and crackers, spaghetti or hotdogs as they were easy and less expensive than eating out. But we survived and are now trying to get our home, our diet and our schedule back on track. We have moved out of survival mode.
I made a few observations about trying to continue with everyday activities in the middle of a life interruption.
- Where did all this laundry even come from anyway?!?
- Thinking is hard
- Sometimes, we can find energy and brain space we didn't know we had
- But that can quickly lead to burn out if we are not taking care of ourselves or getting help
- Getting food to go is so very tempting when in stressful situations. Having easy meals in our cupboard or freezer and having a list of quick inexpensive things we can fix is crucial
- A short time of putting ease over nutrition won't hurt most people, so do the best you can and get back on track when possible.
Monday-
- Breakfast- Leftover pancakes, banana
- Lunch- Ramen, crackers, carrots and celery
- Dinner- Potato soup, fried bologna sandwiches
Tuesday-
- Breakfast- Oatmeal, banana
- Lunch- Sandwiches, crackers, apple
- Dinner- Baked chicken legs, Creamy Garlic Rice, Peas, bread and butter
Wednesday-
- Breakfast- Peanut butter toast, banana
- Lunch- Homemade microwave burritos, carrots and celery
- Dinner- Chili, peanut butter sandwiches
Thursday-
- Breakfast- Oatmeal, banana
- Lunch- Sandwiches, pretzels, canned peaches
- Dinner- Mushroom Oven Rice, 5 minute glazed carrots, cheddar garlic biscuits
Friday-
- Breakfast- Peanut butter toast, banana
- Lunch- boiled egg, cheese and crackers, apple
- Dinner- Chili mac, green beans, corn bread
Saturday-
- Brunch- Biscuits and sausage gravy (using half a one pound package), boiled eggs, strawberries
- Dinner- Tacos with lentils, refried beans and Easy Mexican Rice
Sunday-
- Brunch- Pancakes, homemade pancake syrup, scrambled eggs, strawberries
- Dinner- Taco soup using any leftovers, with tortilla chips and leftover corn bread, banana pudding
