I have been making a lot of rice lately, either as part of the menu for the meal or as an extra side. I don't have a lot of rice recipes in my repertoire, so I was quite happy to run across the visual below. The recipes come from the blog Andi Anne. They seem to prefer Jasmine rice, but you can also use Basmati or Long grain white rice. I am looking forward to upping my rice game, but not sure if I am brave enough to try the Coconut Pineapple Rice!

I just need to keep finding new ways to stretch our budget. Prices are not going to come back down, our wages are not going up, so I need to really get creative as my meals are starting to feel very repetitive. When the meals start feeling repetitive, it can really drag down morale. As we are trying to use the absolute least expensive ingredients in our meals, that means we repeat a lot of things. A few new recipes featuring rice are a welcome change of pace.

Monday-
- Breakfast- leftover pancakes, banana
- Lunch- leftovers, pretzels, carrots and celery sticks
- Dinner- Potato soup, fried bologna sandwiches
Tuesday-
- Breakfast- Peanut butter and chocolate chip oatmeal, banana
- Lunch- Sandwiches, pretzels, pears
- Dinner- Refried bean and cheese quesadillas, taco rice from above, corn
Wednesday-
- Breakfast- Eggs and toast, banana
- Lunch- Pb&J, crackers, carrots and celery
- Dinner- Chicken Enchilada soup, bread and butter, fruit crisp
Thursday-
- Breakfast- Peanut butter and chocolate chip oatmeal, banana
- Lunch- ham and cream cheese roll-ups, crackers, pear
- Dinner- Black bean burgers, pasta salad
Friday-
- Breakfast- Eggs, toast, banana
- Lunch- Leftovers, canned pineapple
- Dinner- Easy Pan Pizza, roasted frozen broccoli, garlic toast
Saturday-
- Brunch- Frittata, fruit cocktail, toast
- Dinner- Creamy Sausage and Mushroom Rigatoni, green beans, garlic toast
Sunday-
- Brunch- Oatmeal Pancakes , homemade pancake syrup, scrambled eggs
- Dinner- Roasted chicken legs, turmeric rice from above, Peas, bread and butter
