So, I’m a little bit in love with the cornbread pizza. The taco toppings were fantastic and was a great way to stretch little bits of leftovers. Together, my family and I brainstormed what else could be done with a cornbread pizza crust and we came up with:
Pizza- pizza sauce, mozzarella cheese, pepperoni and whatever else you like on your pizza, salad
Sloppy Joe pizza- leftover sloppy joe mix, cheddar cheese, pickles on the side
Bbq- leftover pulled pork or pulled beef bbq or shredded bbq chicken, cheddar jack or Colby jack cheese, Cole Slaw on the side
Italian- spaghetti with meat sauce, mozzarella cheese (similar to a polenta dish, another corn based food), salad
Jiffy Cornbread Breakfast Pizza- cheese, eggs, crumbled bacon or sausage
For us, this is a delicious new way to use up leftovers and thanks to the cornbread mixes, we can have something fresh baked for a very economical price. Anything that stretches one or two servings of leftovers to feed my whole family is a winner! I’m thinking this is going to be a Friday night regular, using up bits in the fridge from the week.
Here are the instructions for using one of those small boxes of Jiffy Cornbread mix
1. Prepare cornbread mix according to package directions.
2. Pour into greased skillet. Bake until set, 12-15 minutes.
3. Spread ground beef mixture over cornbread to within 1 in. of edges; sprinkle with cheese.
4. Bake until cheese is melted and crust is golden brown, 3-5 minutes. Serve with toppings as desired
