Monday Meal Planning and Making Three Meals out of a Pork Loin, and a Christmas Gift Idea

 How are you all holding up? The holidays are closing in, so I'm starting my game plan. I had bought a couple of things on clearance over the summer and been setting a little money aside at a time. One fun idea I saw was to collect your quarters, put them in a cute box or coin purse or whatever and then stick a note that says these are for the quarter gum machines, arcade or whatever you have in your space with a promise to go soon. Inexpensive but could be drawn out fun for the little recipient! I am working on my game plan this year, and can share if anyone is interested. 

 Pork Loin is on sale this week, so I bought a 4 pound roast and I am going to make three separate meals out of it. First, I am going to do a brown sugar roast recipe and slice it and we'll have the first third of the roast as slices with a nice big helping of sweet potatoes. With the second third I am going to warm the slices up and serve with bbq sauce as a sandwich. With the final third, I am going to dice it up and add to fried rice. I also good a good deal on lunch meat, so will be enjoying that this week too.

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch-  Home made lunchables, pretzels, grapes
  • Dinner- Brown Sugar Roasted Pork Loin, roasted sweet potatoes, roasted broccoli, garlic toast

Tuesday-

Wednesday-

  • Breakfast- Oatmeal, banana
  • Lunch-  Homemade lunchable, pretzels, grapes
  •  Dinner- Leftover slices of pork loin and bbq sauce sandwiches,cole slaw, corn

Thursday-

Friday-

  • Breakfast- Oatmeal, banana
  • Lunch- PB and J, pretzels, grapes
  • Dinner- Pork fried rice, garlic toast

. Saturday-

  • Breakfast- Fritatta, toast, fruit cocktail
  • Lunch- Tomato soup and grilled cheese, apple slices
  • Dinner- Chicken Stew using regular potatoes instead of baby potatoes and half the chicken, bread and butter

Sunday-
