Meal Planning Monday and a recipe for Easy Salisbury Steak

 I grew up eating those frozen banquet meals, and one that appeared often was Salisbury steak. But there never seemed to be enough in one of those packages, so as an adult I figured out a quick way to make Salisbury steak and make it in a quantity that an adult would like. My easy version is not really a recipe, more of a how to. Do you have any meals that got their inspiration from foods you ate growing up?

Salisbury Steak

Step 1: Get potatoes on to boil for the mashed potatos

Step 2: I make 6 patties using a pound of ground beef, an egg, half an onion diced and bread crumbs or oatmeal if I don't have bread crumbs.

Step 3: While those are frying I mix together in a bowl a can of cream of mushroom soup, then I refill the soup can with milk and add that, a can of chopped mushrooms, salt, pepper, and a sprinkle of red pepper flakes.

Step 4: Once burgers are cooked through, I take them out of the skillet and add the soup mixture to the pan to warm up.

Step 5: Once the gravy is simmering, I add the patties back and spoon gravy over the top of them. Then mash the potatoes.

If you are interested in a version that doesn't use canned soup, Budget Bytes  has a version that is from scratch.  I really like the Budget Bytes website, I wish I had the time and energy to cook like that all the time. I have found a few things that we have really liked.

 

Monday-

  • Breakfast-boiled egg, peanut butter toast, 1/2 banana
  • Lunch- Kids eat at school, Us-Sandwiches, pretzels, canned peaches
  • Dinner- Spaghetti Carbonara, roasted frozen broccoli

Tuesday-

Wednesday-

  • Breakfast- scrambled egg and toast, 1/2 banana
  • Lunch- Kids eat at school, Us- Black bean burgers, baked potato, carrot sticks
  • Dinner- Homemade microwave burritos, chips and salsa, apple slices

Thursday-

  • Breakfast-Boiled egg, peanut butter toast, apple slices
  • Lunch- Kids eat at school, Us- homemade burritos, chips and salsa
  • Dinner- Salisbury Steak, mashed potatoes, Peas

Friday-

  • Breakfast- Oatmeal with chocolate chips and banana
  • Lunch- Kids at school, Us- Salisbury steak, mashed potatoes, fruit or applesauce
  • Dinner-  Easy Pan Pizza, coleslaw

Saturday-

  • Breakfast- Pancakes, homemade syrup, sausage
  • Lunch- Macaroni and cheese with smoked sausage coins, carrots
  • Dinner- Thai Chicken Wraps (can't wait to try these!), pretzels, whatever fruit we have left

Sunday-

  • Breakfast- Biscuits (homemade, store bought, whatever makes sense for you) and gravy, cooked apples
  • Lunch- Fish sticks, french fries, whatever fruit and vegetables we have left or applesauce
  • Dinner- One pan chicken and gravy , mashed potatoes, green beans
