Meal Planning Monday and a recipe for cheese sauce

 For my daughter's birthday this weekend, she asked if she could have cheesy bacon fries. Such an easy request to fill! Below is my recipe for cheese sauce, I use it for homemade macaroni and cheese, for au gratin potatoes, for nachos and I guess now for cheesy bacon fries, hope you try it and like it!

Homemade Cheese Sauce

  • 2 tablespoons butter or margarine (could even use bacon grease for a different flavor)
  • 2 tablespoons flour
  • 1 tablespoon mustard
  • 1 cup milk, can use up to two cups depending on how thin you want it
  • 8 ounces of shredded cheese
  • Salt and pepper to taste
  1.  In a medium size sauce pan over medium high heat, then add the butter and melt.
  2.  Add in the flour to the butter and let it cook for 30 seconds or so, then slowly whisk in the milk. Next, add in the cheese and mustard. Continue to mix until the cheese is melted. Salt and pepper to taste
  3. Serve! If you want a taco flavor, you can add taco seasoning. You can also add cajun seasoning or if using a white cheese like mozzerella, you could add italian seasoning

I like to use cheese sauce on nachos and now fries to actually cut down on the amount of cheese we need to use. You get all that creaminess from the added flour and milk, and you can adjust the amount of cheese you want to use to suit yourself or what you have available. There are tons of videos online showing how to make the sauce.


I still have some bologna, sour cream, liquid yogurt, potatoes, apples and bacon gouda cheese from last weeks Farmers to Families food box so we will be using those up this week. Here is our plan

 Monday-
  • Breakfast- Scrambled egg, toast, 1/2 banana
  • Lunch- Kids eat at school, Us- Leftovers
  • Dinner- Pork chops, microwave baked potatoes, green beans

Tuesday-

  • Breakfast- Fried egg and cheese breakfast sandwiches, apple slices
  • Lunch- Kids eat at school, Us- sandwiches, pretzels, carrot and celery sticks
  • Dinner- Black bean burger, Spaghetti Salad , corn

Wednesday-

  • Breakfast- Boiled eggs, cereal
  • Lunch- Kids eat at school, Us- Sandwiches, leftover spaghetti salad, sliced cucumber
  • Dinner- Homemade microwave burritos, pretzels, apple slices

Thursday-

  • Breakfast- toast, scrambled eggs, 1/2 banana
  • Lunch- Kids eat at school, Us- Ramen with white beans and spinach
  • Dinner- Sloppy Joes made with lentils, carrot casserole

Friday-

  • Breakfast- boiled eggs, cereal
  • Lunch- Kids at school, Us- Leftovers
  • Dinner- Cilantro Lime Chicken & Rice (w/o the jalapeno and using regular chicken instead of frozen), peas

Saturday-

  • Breakfast- Fried egg and bologna sandwiches, fried onions and potatoes, smoothies
  • Lunch- Chicken noodle soup with homemade noodles and without the chicken
  • Dinner- Cheesy bacon fries, salad, birthday cake

Sunday-

  • Breakfast- Blueberry Pancakes
  • Lunch- Tuna or egg salad sandwiches, pretzels, fruit salad with whatever fruit we have leftover
  • Dinner- Mushroom Oven Rice, green beans, baked beans
