This weekend, our store had some really great sales! They had 1 lb packages of bacon for 99 cents if you spent $15 limit 6, so you bet I spent $15! They also had 5 lb bags of potatoes and boxes of cream cheese for $1 and the big winner was 10 lb bags of chicken quarters for $6.90! That is chicken for 69 cents a pound! I was really excited about this as the cost of everything just keeps going up and up. I bought two of those big bags of chicken and brought them home and opened them up right away. I put the number of leg quarters we would need for a meal into a freezer bag and from those two bags ($13.80) we got 6 meals worth of chicken if we eat them as quarters. That is $2.30 a meal. Just imagine how much cheaper it will be if we stretch that chicken even farther. I am so excited, WooHoo!
I know that I am so lucky to have a full size fridge with freezer so that I could take advantage of this deal this way. If I only had a small fridge, I could still take advantage of one bag from the sale. I would bring it home and throw all of the chicken in the oven or boil or cook on the stove in batches until it was all cooked. Then I would serve some for that night's meal while picking the rest of the chicken off the bone so that it takes up way less space. A lot of work up front, but so worth it to have that inexpensive chicken!
We don't normally eat two pieces of chicken each for a meal, but at this price, I can splurge a little and serve everyone a quarter, or I can cut the pieces apart to make one piece each and save the other pieces for another meal. Here is a video on how to cut the pieces apart if you're unsure. With the extra pieces I can either serve them as is, or boil and shred to use in something else.

- Lunch- Kids- Sandwiches, pretzels, apple slices
- Dinner- Baked Chicken quarters, Homemade rice a roni, peas
Tuesday-
- Breakfast- Fried egg and cheese breakfast sandwiches, apple slices
- Lunch- Turkey and cheese tortilla roll ups, pretzels, carrot and celery sticks
- Dinner- Vegetable Casserole, baked beans, biscuits
Wednesday-
- Breakfast- Leftover pancakes, 1/2 banana
- Lunch- Leftovers, apple slices
- Dinner- Blt's, microwave baked potatoes
Thursday-
- Breakfast- peanut butter oatmeal, 1/2 banana
- Lunch- Homemade microwave burritos, pretzels, carrot and celery sticks
- Dinner- Honey Garlic Chicken ,Authentic Hawaiin Macaroni, green beans
Friday-
- Breakfast- toast, banana
- Lunch- Leftovers, boiled egg, applesauce
- Dinner- Tuna Pasta salad, fruit plate
Saturday-
- Breakfast- French toast, bacon
- Lunch- Cleaning up all the leftovers
- Dinner- Spanish rice, corn
Sunday-
- Breakfast- Egg and fried bologna sandwiches, fried potatoes
- Lunch- grilled cheese sandwiches, chips, whatever fruit we have left
- Dinner- Salad bar- salad with choices of vegetables, cheeses, lunchmeats, dressings and chopped egg, garlic toast (This went so well last weekend, we decided to do it again!)
