Monday Meal Planning a recipe for Scalloped Cabbage

 Eggs have come down in price!!! I was able to get several dozen for $2.50 and I am so glad, we have missed eggs. They are a very important part of our meal planning. I am relieved about this. I am sharing my scalloped cabbage recipe today as cabbage is on sale for 49 cents a pound, and that is hard to beat! It is similar to mac and cheese, so it passes at my house haha.

 Scalloped Cabbage

Ingredients

  • 1/2 medium head cabbage, chopped (about 4 cups)
  • 3 tablespoons butter or margarine
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • Dash pepper
  • 1 tablespoon mustard, yellow or Dijon 
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese, or whatever kind of cheese you like
  • 3/4 cup bread crumbs
  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 350°. Boil cabbage until tender. Drain and place cabbage in a greased 2-qt. baking dish. In a saucepan, heat butter or margarine over medium heat. Whisk in flour, salt and pepper until smooth; gradually whisk in milk and mustard. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in cheese. Pour over cabbage. Combine bread crumbs and butter; sprinkle over top.
  2. Bake, uncovered, until bubbly, 20-30 minutes. Serve immediately.

Tuesday-

  • Breakfast- Scrambled eggs, toast, banana
  • Lunch-  Ham and cheese roll ups, crackers, apple
  • Dinner- Nachos with Nacho Cheese Sauce, refried beans, lettuce and tomatoes

Wednesday- 

  • Breakfast- Peanut butter toast, banana
  • Lunch- Homemade microwave burritos, carrots and celery
  •  Dinner- Polish sausage, mac and cheese, peas, biscuits

Thursday-

  • Breakfast- Oatmeal, banana
  • Lunch- Sandwiches, pretzels, canned peaches
  • Dinner- Frittata using sausage left from the weekend, fruit cocktail, toast

Friday-

Saturday-

  • Brunch- Egg and fried bologna sandwiches, fried potatoes and onions, apples
  • Dinner- Potato soup, brats

Sunday-
