I know, I am late again. I am sorry. I am trying my best, I promise! As we get closer and closer to the most expensive day of the year, I am scaling back in every place I can. This week, that means 5 meatless meals, the only meat on the weekends when there are two meals. There are so many meatless meals on the internet. I chose some easy, well loved meals this week as it will be a stressful one, as evidenced by my late post.
I hope you are able to find some joy, no matter how small, this week. Sometimes we have to look really hard for those things, but don't stop looking. You've got this!
Here is this week's menu plan!
Monday-
- Breakfast- Leftover Oatmeal Pancakes, banana
- Lunch- Sandwiches, crackers, carrots
- Dinner- Black bean burgers, cole slaw, roasted sweet potatoes
Tuesday-
- Breakfast- Eggs, toast, banana
- Lunch- Leftovers
- Dinner- Mushroom Oven Rice, 5 minute glazed carrots, cheddar garlic biscuits
Wednesday-
- Breakfast- Oatmeal, cinnamon toast, banana
- Lunch- Homemade microwave burritos, crackers, apple
- Dinner- Spaghetti, green beans, garlic toast
Thursday-
- Breakfast- egg, toast, banana
- Lunch- Tuna sandwiches, crackers, carrots and celery
- Dinner- Country Potato Soup, fried bologna sandwiches
Friday-
- Breakfast- Oatmeal, Peanut butter and banana smoothies
- Lunch- Egg salad sandwiches, crackers, apple
- Dinner- 4 Layer Burritos, corn, chips and salsa
Saturday-
- Brunch- French toasted pb and j, bacon
- Dinner- Baked chicken and gravy, mashed potatoes, corn, biscuits
Sunday-
- Brunch- Oatmeal Pancakes , homemade pancake syrup, scrambled eggs
- Dinner- fried rice served with diced leftover chicken, cabbage and onions fried in bacon grease, Baked Cinnamon Apples
