Last week I put spaghetti on our menu plan, then forgot to pick up spaghetti sauce at the store! I went online looking for a quick sauce since I had already started boiling the pasta and didn't have time to be sweating onions and whatever. I lucked out and found this Spaghetti Sauce from the blog Pip and Debby using only common, shelf stable ingredients. We made it and really liked it! It is a little less expensive than buying cheap spaghetti sauce, takes like an extra 90 seconds to stir all the ingredients together and is healthier for us as there are no extra ingredients or preservatives. Try it out! I will say though if you are not a huge lover of oregano, feel free to dial back the amount of oregano used.
Pip and Debby's Spaghetti Sauce from Tomato Paste
Ingredients
- 6 oz tomato paste
- 1 1/2 cups water
- 2 tsp sugar
- 1 tsp oregano
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Combine all ingredients in a medium sauce pan and bring to a boil over medium-high heat, then simmer over medium-low heat for 20 minutes. Stir occasionally. 2. Pour over cooked pasta and top with Parmesan cheese, if desired.
How is your week going? I will admit, going to the store anymore fills me with anxiety. Prices are just up, up, up. My go to, eggs, are crazy expensive and half the time there isn't any. Sometimes I make a menu plan and list and then find out an important ingredient is no where to be found so have to rething a meal on the fly, which is hard to do while shopping with kids. It is so frustrating! It wasn't that long ago that I could just make a list of whatever I needed and run to the store confident that what I need will be there and for a decent price. Now, it feels like food shopping on a budget or with food stamps or SNAP is about impossible. The food pantries in our area are begging for donations. The little free pantry box that someone set up in our little town is constantly nearly empty. Not because no one is filling it, but because it is a truly anonymous way to get some free food and people are taking advantage of it. - Lunch- Pizzadillas, crackers, fruit cocktail
- Dinner- Fried Cabbage and Noodles with hot dog coins, 5 minute glazed carrots, bread and butter
Saturday-
- Brunch- Fried bologna sandwiches, fried potatoes and onions
- Dinner- Meatloaf, Creamy Garlic Rice, roasted broccoli, corn bread muffins
Sunday-
- Brunch- Pancakes, homemade pancake syrup, scrambled eggs, canned pears
- Dinner- Salsa Chicken in tortillas, Spanish rice, corn
