Monday Menu Planning

 No matter what the news says, inflation may be slowing, but prices are for sure not going back down. I have been slowly trying to buy an extra on sale food item or two as I shop, hoping to build up a little store. That way, I can start shopping and buying some things when they are only on sale.

 I’ve heard about pantry building as a way to make sure you are paying the absolute lowest prices for things. The idea is that when an item, say spaghetti noodles, go on sale, you buy as much as you would need to last you until the next time it goes on sale. At first, that’s tough because it takes a lot of observation to figure out the pattern, but it can be helpful. At the very least, I make it last as long as I can so I buy fewer things at or near full price. I’ve been doing this with cheese as it goes on sale about once a month at Kroger. I also stocked up when pasta went on sale. I wasn’t able to get enough to last until it went on sale again, but at least I’ve bought fewer at full price, freeing money up for something else. A few weeks ago it was white potatoes we are still working through and before that sweet potatoes. I’m hoping as Easter is this week, I’ll be able to stock up on some baking goods.

 We are finding my menus getting simpler and simpler as well as repetitive. I think that was why I was so tickled with the corn bread pizza. Something very new to us, but a great way to use up leftovers. As if I wasn’t always trying to pull out all the tricks before, I’m always on the hunt for new ways to feed us healthily. Here is this week’s menu plan, hope your week goes smoothly! 

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch- sandwiches, crackers, canned pineapple
  • Dinner- Spaghetti, green beans, garlic toast

Tuesday-

  • Breakfast- Peanut butter oatmeal,  apple slices
  • Lunch-  Ham and cheese roll ups, crackers, canned pineapple 
  • Dinner- Vegetable soup, sandwiches

Wednesday-

  • Breakfast- Scrambled egg, toast, banana
  • Lunch-  Microwave burritos, cucumber slices
  •  Dinner- Fake jambalaya, garlic toast

Thursday-

  • Breakfast- Peanut butter oatmeal, apple slice
  • Lunch-  Leftovers, boiled egg, carrots and celery sticks
  • Dinner- Scalloped potatoes, baked beans, biscuits 

Friday-

  • Breakfast-  Eggs, toast, banana
  • Lunch-  Leftovers, bread and butter, carrots and celery
  • Dinner- Sloppy Joes with ground beef and lentils (save some for Sunday), pasta salad, corn

Saturday-

Sunday-

  • Brunch- Cinnamon rolls, sausage links, fruit salad
  • Dinner-  Sharing Easter dinner, I'm bringing scalloped potatoes and brownies
