I really hope you are finding ways to have a little sunshine in your days. The news is so overwhelming, the relentless inflation is overwhelming, life sometimes feels overwhelming. Make sure you are taking time to take care of yourself. Turn off the phone alerts, read a book, cuddle up and watch a funny movie, anything that gives you a little escape. We've got this!
Got a good deal on strawberries, 99 cents a pound. So I bought several boxes. Some we will eat fresh, some we will freeze and some I will make into a strawberry jam, yum! Easy Strawberry Jam makes a small batch, enough to store in the fridge for a couple of weeks. IF I can make it last that long!

- Breakfast- Leftover pancakes, strawberries
- Lunch- sandwiches, crackers, canned peaches
- Dinner- Mushroom Oven Rice, baked beans, peas, biscuits
Tuesday-
- Breakfast- Eggs and toast, banana
- Lunch- Tuna Pasta Salad, crackers, strawberries
- Dinner- Scalloped Potatoes, deviled eggs, peas, garlic toast
Wednesday-
- Breakfast- Cinnamon raisin oatmeal, banana
- Lunch- sandwiches, crackers, strawberries
- Dinner- Kielbasa, Pepper, Onion and Potato Hash, bread and butter
Thursday-
- Breakfast- Cinnamon Toast, banana
- Lunch- Tuna pasta salad, crackers, carrots and celery sticks
- Dinner- Cheesy White Bean and Tomato Bake, corn, bread and butter
Friday-
- Breakfast- Peanut butter and strawberry jam toast, banana
- Lunch- microwave baked potatoes, carrots and celery sticks
- Dinner- Sheet pan dinner Honey Garlic Chicken Thighs with Carrots and Broccoli using frozen broccoli
Saturday-
- Breakfast- Blueberry muffins from a mix, boiled egg
- Lunch- Leftovers, veggies and dip
- Dinner- Spaghetti, green beans, garlic bread
Sunday-
- Breakfast- Pancakes, homemade pancake syrup, scrambled eggs
- Lunch- Bean and cheese quesadillas, chips and salsa
- Dinner- Mini Meatball subs made in hot dog buns, chips, veggies and dip
