Meal Planning and Something To Have Instead of Eggs

This week I was able to buy link breakfast sausage for less than eggs, so we will be replacing eggs for breakfast with a sausage link! Eggs were $3.99 so that means each egg cost 33 cents. I got a package of 14 sausage links from Kroger for $2.99, making each link 21 cents. What a weird finding! I am really kind of excited about this in one way, the cost of eggs gives me an excuse to eat sausage! In an ideal world, I would just be able to have cheap eggs, but that is not going to happen any time soon, so making the best of a bad situation I guess!

Getting creative is the name of the game. I have finally come to terms that the world has changed and some of our old saving tips just don't work anymore. I'm out here just trying to make sure I'm serving meals with some sort of protein, carb, and fruit or veg.


 Here is this week's menu plan. I've linked a couple of recipes that I will personally tweak to make them less expensive. For the Lentil Biscuit Cups, I will only use half a pound of hamburger, saving the other half for the chili, and add cooked lentils to round it out. For the Sheet Pan Fried Rice, I will be substituting frozen peas and carrots for the fresh, leaving out the ingredients I don't have like the sesame oil. I linked it more for the technique than the actual recipe.

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch-  PB&J sandwiches, crackers, clementines
  • Dinner- Roasted Chicken legs, Cheddar Broccoli Rice, corn, biscuits

Tuesday-

Wednesday-

  • Breakfast- Cinnamon raisin oatmeal, canned peaches
  • Lunch-  PB&J sandwiches, crackers, apple
  •  Dinner- Scalloped Potatoes, baked beans, green beans, garlic toast

Thursday-

Friday-

  • Breakfast-  Cinnamon raisin oatmeal, toast, apple
  • Lunch- PB&J Sandwiches, crackers, carrots and celery
  • Dinner-  Sheet Pan Fried Rice substituting frozen peas and carrots and leaving out the shrimp, Its one of those recipes where you are following it more for technique

Saturday-

  • Breakfast- Fried bologna sandwich, fried potatoes and onions
  • Lunch- Quesadillas (make extra for lunches next week), chips and salsa
  • Dinner- Chili, peanut butter sandwiches, Cole Slaw ( save some chili for tomorrow)

Sunday-
