Hey Everybody!
I know it has been a long time, thanks for being patient with me. I am so grateful to those who have encouraged me to get back to it. We had some things come along that took me away, but I am happy to be back! We are gearing up for back to school, and that means school lunches and quick dinners!
Here is the post I put up one year ago today! My plan of attack is not much different than last year. The quesadillas, homemade lunchables and pancakes and sausages were a hit. Also, different pasta salads, they have really developed a love for different kinds. I am also going to continue to pick up frozen pizzas on sale, baking them and using them for lunches too.
Prices are so frustrating and it is so hard to go back to old posts and see how hard I worked to keep under our budget and how much less expensive things were back then! But prices never go back, so we just keep pressing on. Over the summer, my family had a chance again to participate in the free summer lunch program. It was not there for a while, but it was back this summer with the addition of bigger cartons of shelf stable milk. This became a fun treat for us as I bought some Nestle Quick powder and we would make chocolate milk! This saved us some money for sure, but since the kids didn't have to eat the whole lunches to survive, we will be able to put a lot of the leftover things in school lunches for the first week or two.
For this week, I made these Pumpkin Apple Muffins to have for breakfasts with a banana and alternated with scrambled eggs and toast. They are so good it's hard to eat just one! For lunches, I made this Tuna Pasta Salad, and bean and cheese quesadillas. Plums were an ok price this week, $1.49 a pound, so got those for lunches along with carrot and celery sticks. I have finally convinced some of my kids that celery dipped in peanut butter is a good thing, so some of them will be packing those. My dad used to make them for us all the time. This week's dinners included chicken legs, pork chops, and black bean burgers. Friday night we are having smoked sausage and this Slow Cooker Corn Pudding.
