Several of the apples that came in my Farmers to Families box were bruised so I decided to make muffins out of them. The recipe comes from Taste of Home. They are a pretty dense muffin and great for breakfast. It makes 18 muffins
Apple Pumpkin Muffins

- 2-1/2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 2 cups finely chopped peeled tart apples
Directions
In
a large bowl, combine the first seven ingredients. In a small bowl,
combine eggs, pumpkin and oil; stir into dry ingredients just until
moistened. Fold in apples. Fill greased or paper-lined muffin cups
two-thirds full. Bake at 350° for 30-35 minutes or until muffins test
done. Cool for 10 minutes before removing from pan.
Here is our menu plan for the week, we still have a lot of food left from the food boxes, so I am going to be able to continue my cupboard stock up plan, yay!

- Dinner- Loaded Baked Potato soup, crackers
Tuesday-
- Breakfast- Muffins, boiled eggs
- Lunch- Kids eat at school, Us- sandwiches, pretzels, carrot and celery sticks
- Dinner- Dinner in a bag doubled using meat/lentils combination, salad, garlic toast
Wednesday-
- Breakfast- Muffins, yogurt
- Lunch- Kids eat at school, Us- leftovers
- Dinner- Hotdogs, pretzels, apple slices
Thursday-
- Breakfast- Muffins or toast, scrambled eggs
- Lunch- Kids eat at school, Us-Sandwiches, pretzels, canned peaches
- Dinner- Black bean burgers, microwave baked potatoes , roasted broccoli
Friday-
- Breakfast- Muffins, yogurt
- Lunch- Kids at school, Us- Leftovers
- Dinner- Nachos made with taco meat/lentils
Saturday-
- Breakfast- Pancakes, cooked apples
- Lunch- leftover nachos
- Dinner- Swedish meatballs (can use frozen meatballs to save time), mashed potatoes, Peas
