Meal Planning Monday and adjusting to inflation

 Hey everybody, what a week last week was! Our hearts go out to, well everyone I guess. There is so much uncertainty in the world right now, and it seems like everyone could use some prayers. 

 You may have noticed that I have cut our menu plan back to two meals instead of three on the weekends. The prices at the grocery stores just keep going up and less and less is going "on sale" so I am adjusting how I feed my family. My food budget is being stretched thin, and at the same time I am trying to buy a few shelf stable things just in case.  I am using a two pronged approach to make this work. Step one is to cut out even more meat from our diet. Step two is to change our weekend meals to include two meals that are a little more hearty and provide inexpensive snacks when someone gets hungry or before bed. 

 For this week's plan, I am relying on two ingredients pretty heavily since both are inexpensive, potatoes and cabbage. They make several appearances in different forms. Also, I am concentrating our limited meat ration to the weekends and I will be filling any empty belly spaces with popcorn from our new to us popcorn popper and crackers with peanut butter. We will continue using lots of eggs too.

 I know that over the summer the food stamp program, also known as SNAP, got a raise, but it is honestly not nearly as much as inflation and it is getting harder and harder to feed our families. More cash that could be used to supplement these programs is also having to go towards fuel, compounding the problem. Now is the time to get even more creative. One way I try to keep myself from utter despair at circumstances is to read about how people made it work during the depression and rationing in WWII. It is inspiring to me how people just got on with it. Another way I help myself push through is to research new recipes to try using as few ingredients as possible. Some recipes are a hit, some we grin and swallow making note not to try that again. My husband is a trooper and eats whatever is put in front of him, the kids, well, not as much, but I always try to have something familiar available when we try really new things. What kind of creative things do you do to save grocery money?

Monday-

  • Breakfast- Eggs, toast, banana
  • Lunch- Kids eat at school, us-Sandwiches, pretzels, carrots and celery
  • Dinner- Bean soup and corn bread

Tuesday-

  • Breakfast- Eggs, toast, banana
  • Lunch- Kids eat at school, us-  Leftover soup, crackers
  • Dinner-  One Pot Veggie Pasta, garlic toast

Wednesday-

  • Breakfast- Peanut butter oatmeal, banana
  • Lunch- Kids eat at school, us- Ramen, carrots and celery sticks
  • Dinner- Schnitzel , Colcannon, bread and butter

Thursday-

  • Breakfast-  eggs, toast, banana
  • Lunch- Kids eat at school, us- Leftovers, boiled egg, canned pears
  • Dinner- Scalloped Potatoes, Baked beans, roasted frozen broccoli

Friday-

  • Breakfast- Cinnamon toast, apples and peanut butter
  • Lunch- Kids eat at school, us- Ramen, carrots and celery
  • Dinner- Cabbage with Chicken, (to use up the rest of the cabbage) bread and butter, corn

Saturday-
