Meal Planning Monday and My Recipe for Egg Salad

The kids are home from school today, so we are having lunch all together and since the weather is nice, we are taking a picnic to the park. It'll be pretty muddy, but I'm looking forward to us being in the sun and fresh air before it turns cold again. We are packing egg salad sandwiches, pretzels, apples, and box mix brownies. Here is my recipe for egg salad. PS, the pork butt from last weekend turned out fantastic, and the new casserole was good too!

Egg Salad

Ingredients

  • 4 eggs 
  • 3 Tbsp mayonnaise 
  • 1 Tbsp chopped pickle or can use relish
  • 1 tsp mustard
  • salt and pepper to taste, can also add paprika

Instructions

  • Add the eggs to a saucepot and cover with water. Place a lid on the pot and turn the heat on to high. Bring the water up to a full boil. Once it reaches a boil, turn the heat off and let the eggs sit in the hot water (lid on) for 12 minutes.
  • After 12 minutes in the hot water, transfer the eggs to an ice bath or run under cold water until cool. Peel the eggs then chop them into ½-inch pieces.
  • Add the chopped egg to a bowl along with the mayonnaise, mustard, pickles, salt, and pepper. Stir to combine, mashing some of the egg yolk into the dressing as you stir.
  • Taste the egg salad and adjust the ingredients to your liking. Serve immediately or refrigerate until ready to eat.

Monday-

  • Breakfast- Oatmeal, banana
  • Lunch- Egg salad sandwiches, pretzels, apples, brownies
  • Dinner- Potato soup, Cheddar Garlic Drop Biscuits (they say these taste like Red Lobster, but Ive never eaten there so I have no idea. But we like biscuits so I am sure we will like these)

Tuesday-

  • Breakfast- Eggs, toast, banana
  • Lunch- Kids eat at school, us-  Leftover soup, crackers
  • Dinner- Pizzadillas, salad (made like quesadillas but with spaghetti sauce, mozzarella cheese and pepperoni)

Wednesday-

  • Breakfast- Peanut butter oatmeal, banana
  • Lunch- Kids eat at school, us- Sandwiches, pretzels, carrots and celery sticks
  • Dinner- Skillet Ham & Rice, Peas

Thursday-

  • Breakfast-  eggs, toast, banana
  • Lunch- Kids eat at school, us- Leftovers, boiled egg
  • Dinner- Spaghetti, green beans, garlic toast

Friday-

Saturday-

Sunday-

  • Brunch- Biscuits and gravy, canned pears
  • Dinner- BBQ chicken legs, mashed potatoes, corn, garlic toast
