Monday Meal Planning and How to Roast Crispy Chicken Legs

My family loves roasted chicken legs, the crispy chicken skin is the best part! It's actually pretty easy to make delicious chicken legs or thighs with nice crispy skin using the steps below. I find them pretty goof proof and make them often, changing up the seasonings according to what I have on hand. The three most important steps are making sure to pat the chicken pieces dry, coat the skin in oil so it doesn't steam and lifting the pieces up off the baking sheet. If there isn't a way to lift the chicken off the baking sheet, the chicken will still be nice and crispy in places, but the parts touching the baking sheet won't. 

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius)
  • Pat the chicken drumsticks dry with paper towels to ensure crispiness
  • In a mixing bowl, combine oil, salt, pepper, and whatever seasonings you like. (Garlic powder, Paprika, etc)
  • Add the chicken drumsticks to the bowl and toss them thoroughly to coat with the seasoning mixture
  • Arrange the seasoned drumsticks on the baking sheet, leaving space between each piece for even cooking. Even better is to set a cake cooling rack in the baking sheet and put the chicken on the rack, the more air circulation the better
  • Bake the drumsticks in the preheated oven for 35-45 minutes or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius)
  • Once done, remove the drumsticks from the oven and let them rest for a few minutes to allow the juices to redistribute
  • Serve hot and enjoy your crispy baked chicken drumsticks!

  • Lunch-  Leftovers, carrots and celery sticks
  • Dinner- Roasted Chicken legs, Cheddar Broccoli Rice, corn, biscuits

Tuesday-

Wednesday-

  • Breakfast- Scrambled egg, toast, canned peaches
  • Lunch-  Sandwiches, crackers, celery and carrot sticks
  •  Dinner- Chicken noodle soup with homemade noodles and without the chicken, bread and butter

Thursday-

Friday-

  • Breakfast-  Eggs, toast, banana
  • Lunch- PB&J Sandwiches, crackers, carrots and celery
  • Dinner- Scalloped Potatoes, baked beans, roasted frozen broccoli, garlic toast

Saturday-

  • Brunch- Fritatta, toast, fruit cocktail
  • Dinner- Chili, peanut butter sandwiches, Cole Slaw ( save some chili for tomorrow)

Sunday-
